Our vision of 'Gardenup' is to maintain a community farm in Boyup Brook, where people of all ages feel welcome. Our dream is to provide a safe and healthy place where we can enjoy gardening as a social activity. We will share the harvest by working together. Our aim is to provide education on healthy living and nutrition according to the Bio Dynamic and Organic farming and gardening methods. In this way we can master skills to grow fruit and vegetables according to these biodynamic practices and make safe and healthy food accessible to the community. Discover the delightful world of cumquat marmalade, crafted with only 1/3 of the sugar typically found in traditional recipes. Infused with a harmonious blend of cardamom, clove, cinnamon, and star anise, this recipe is a true culinary masterpiece.
For precise results, ensure to properly operate the cutter by filling it only to the top of the feeder and utilising the pusher to gently guide the fruit through.
To recreate this delectable creation, commence by washing 1500g of cumquats at a time and feeding them through the cutter on a thick/slicing setting. Next, transfer the sliced cumquats into a pot on the stove, adding 250 ml of water and 500 g of raw sugar. Incorporate a small cotton bag containing a fragment of cinnamon bark, 2 cloves, 4 cardamom pods, and a star anise.
Gradually warm the mixture until it begins to bubble, stirring continuously for approximately 20 minutes. Subsequently, cover the pot, increase the heat, and simmer for an additional 10 minutes.
Finally, carefully transfer the marmalade into clean glass jars, seal them securely, and behold the tangy, sweet, and perfectly set result.
