I’m often asked how to eat healthy with limited time. This from start to plate in the sink was under 30 minutes. I like food to taste good, and when what I like, also benefits my body, happy bonus.

I also believe in the 80/20 principle with most things. Food is included in this. The cheese (Parmesan) was halved as it for me was too much once I started to grate. I also added pumpkin seeds for crunch at the end. I hope you enjoy Dx

Key benefit

Chilli - heart health, boosted metabolism and potential anti cancer properties

Broccolini (steamed) - folate, fibre, antioxidants, vitamin k & c -heart health, immunity, digestion and bones

Egg - omegas, a d e & b12 vitamins, protein, choline - brain, eyes & heart

Onion - antioxidants, prebiotics, vitamin c, folate, immunity, gut, heart, brain &’inflammation

Coriander - c k & folate - inflammation, gut, antioxidant, blood sugar, cholesterol AND for me the most important it is a natural chelator of heavy metals

So many have trouble speaking up for themselves for fear of upsetting someone, creating disharmony.

If you can’t speak up for yourself, how can you speak up / advocate for others?

Having self worth is key. Having boundaries is next in line. Knowing you are worth these boundaries sees you maintaining them. Having boundaries and not seeing your self worth, will see your boundaries continually breached. Which will leave you questioning everything.

Reinforce your self worth, believe it, develop your boundaries and then fortify them. You are worth it Dx
