✨ Kale & Freekeh Salad ✨

Ingredients
* 2 tbsp olive oil
* 5 tbsp apple cider vinegar
* 3 tsp Dijon mustard
* 1 tbsp honey
* 1 tbsp fresh lemon juice
* 1 large bunch of kale (adjust to suit)
* 2 cups cooked freekeh (I used Chef’s Choice Cracked Freekeh – Premium Wholegrain Ancient Superfood)
* ¼ cup pepita seeds
* ¼ cup goji berries
* 1 avocado, sliced
* Small bunch of radishes, thinly sliced
* Sea salt and cracked pepper, to taste
(Adjust quantities to suit taste or serving size.)

Method
1. Cook the freekeh according to the packet instructions, then set aside to cool.
2. Prepare the dressing in a small bowl, whisk together olive oil, apple cider vinegar, dijon mustard, honey, and lemon juice until smooth.
3. Remove any tough stems from the kale, give a thorough wash, and chop the leaves. 
4. Assemble the salad in a large bowl, combine kale, cooled freekeh, pepita seeds, goji berries, radish, and avocado.
5. Add the dressing and toss well to coat.
6. Season with celtic sea salt and cracked pepper to taste.
7. Serve immediately or chill for 30 minutes to allow flavours to develop.

🌸 A simple, nourishing salad packed with fibre, healthy fats, and vibrant colour — perfect for supporting gut health, hormones, and energy.

✨ Blood Sugar Balance & Gut Health ✨

So many people think fatigue, mood swings, bloating, or brain fog are just part of aging or just hormones.

But as a Functional Nutritionist & Gut Health Practitioner, I see every day that these are not normal — they’re signs your body is out of balance. This not only applies to adults but children also 💛

✨ Wholesome Chicken & Vegetable Soup ✨

Ingredients

- 1 large tomato
- 5 x small white potato
- 1/4 small Chinese cabbage
- 2 stalks of celery
- 2 carrots
- 1 leek
- 1/2 head of cauliflower
- Filtered water (enough to cover)
- Chicken stock (to taste)
- 1-2 chicken breasts (already cooked - I used leftovers)

Instructions

1. Prep the Vegetables:
- Chop all the vegetables into small, even pieces for consistent cooking.

2. Combine Ingredients:
- Place all the chopped vegetables into a large pot.

3. Add Liquids:
- Cover the vegetables with filtered water.
- Add a generous amount of chicken stock for flavour.

4. Cook the Soup:
- Bring the mixture to a boil.
- Reduce to low heat and let it simmer until the vegetables are soft.

5. Mash and Mix:
- Once the vegetables are tender, use a potato masher to mush them up. This gives the soup a creamy texture.

6. Add Chicken:
- Cut the chicken breast into bite-sized pieces and stir it into the soup.

7. Final Cooking:
- Cook for an additional hour on low heat, allowing the flavours to meld.

8. Serve

Feel free to:
- Adjust the seasoning with salt and pepper as needed.
- Add or take any vegetables you like.
- Remove chicken all together and make it a vegetable soup
