Good at taking photos… not so good at sharing them lately! 😜
So here’s a quick snap of my Sunday dinner - a simple 'fridge clear-out' meal using leftover veggies and pantry staples.
I try to make Sundays my reset day. I like to use what’s left from the week to create something nourishing, reduce waste and prep a couple of extra servings to make weekday lunches easier.
I always keep some staples on hand:
🌿Wholegrains (like brown rice or quinoa in this case)
🌿Canned and dried legumes
🌿Tofu, falafels, eggs or tuna
🌿A few condiment essentials for making up quick dressings and sauces - they make all the difference.
This dressing was made with:
½ cup greek yogurt
1 tbsp olive oil
1 tblsp apple cider vinegar
2 tblsp water
Paprika, garlic, cumin, pepper & salt
(I just taste and adjust until it tastes right 🤭)
I then tossed some leftover chicken and fish in paprika, cumin, salt and olive oil, gave them a quick pan-fry, and served over the mixed green salad.

✅ Nutrient-packed
✅ Fibre-fuelled
✅ Some extra lunch sides and dressings sorted
✨️It’s often the easy, 'thrown-together' meals that can calm certain thoughts and e-motions around food. When prepared from a state of ease, curiosity and playfulness, they can end up the most nourishing - in all the ways humans need to be nourished....✨️
