🍎🍌🥕 ABC Muffins (perfect for lunch boxes)

Makes: ~12 muffins

Ingredients
* 1 cup grated apple (skin on)
* 1 ripe banana, mashed
* 1 cup finely grated carrot
* ⅓ cup extra virgin olive oil
* ½ cup Greek yoghurt
* 2 eggs
* ⅓ cup brown sugar (or maple syrup)
* 1 tbspn chia seeds
* 1 tsp vanilla extract
* 1¾ cups plain flour
* 2½ tsp baking powder

Method
1. Preheat oven to 180°C (fan 160°C) and line a muffin tin.
2. In a large bowl, whisk eggs, olive oil, Greek yoghurt, sugar, banana and vanilla.
3. Stir in apple and carrot.
4. Gently fold in flour and baking powder - don’t over mix.
5. Spoon into muffin cases (about ¾ full).
6. Bake 20 minutes, until golden and springy to touch.
7. Cool slightly before demolishing.
