Avo substitute... use whatever rocks your boat in place of the crab meat.

Crab Salad in Avocado Boats
Ingredients
- 1/3 cup finely chopped red onion
- 3 tablespoons mayonnaise
- 1/2 teaspoon Thai style hot sauce such as Sriracha
- 2 tablespoons chopped fresh cilantro
- 3 teaspoons fresh lime juice
- 1/2 teaspoon ground cumin
- 1/2 teaspoon lime zest
- 8 ounces lump crab meat
- 1 ripe large avocado, halved and pitted

Preparation
Stir red onion, mayonnaise, hot sauce, cilantro, 2 teaspoons lime juice, cumin and lime zest in medium bowl to blend.

Mix in crab meat. Season salad with salt and pepper.

Brush each avocado with the remaining 1 teaspoon lime juice to prevent avocado from browning.

Mound crab salad on each avocado half.

Serve salad with lime wedges.

Pizza with a difference...

Pizza bites with pumpkin
Ingredients
- 600 g pumpkin, cleaned
- 2 Tbs olive oil
- 120 g feta cheese, crumbled
- 120 g mozzarella, torn into small pieces
- 2 eggs
- 2 tsp dried oregano
- 4 Tbs parsley, chopped
- 4 cloves garlic, minced

Preparation
Chop pumpkin using a food processor until rice-like.

Saut pumpkin in hot olive oil for 3 minutes. Set aside and let cool.

Mix feta and mozzarella; add, one at a time, eggs.

Mix and combine.

Add pumpkin and spices, mix well until well blended.

Evenly spoon the mixture into the greased muffin tin molds. Press pizza dough down evenly and firmly (the pressing down firmly is very important to make sure they stick together).

Place in the oven and bake for 30 minutes at 200C.

Remove the pizza bites from the oven and let set until cool (this is also very important let the pizza bites set in their pan for 5 10 minutes before removing if you take them out while they are too hot they will break).

Tuesday kinda snack...

Monte Carlo Sandwich
Ingredients
- 1/2 pound Butter, melted
- 1/2 cup each butter and oil
- Cheese, sliced
- Cooked ham, sliced
- 2 Eggs, beaten lightly
- cup milk
- 1/2 teaspoon Salt
- Turkey, sliced
- 12 slices white sandwich bread

Preparation
Spread butter on each slice of bread.

Place slice of ham and turkey on one slice of bread. Cover with second slice.

Place cheese on top and cover with third slice of bread. Secure with toothpicks.

Have a Smoothie Week ahead...

Apple Pie Smoothie
Ingredients
- 1 tablespoon unsalted almond butter
- 1 tablespoon apple sauce
- 1/2 cup vanilla fat free yogurt
- 1 tablespoon 7 grain granola
- 1/4 teaspoon Ground cinnamon
- 1 teaspoon honey
- ice cubes
- 1 teaspoon Maple syrup
- 1/2 cup milk
- 1 red delicious apple, cut into pieces

Preparation
Combine all ingredients in a blender and pulse until smooth.

Serve immediately.

Blue Cheese Burgers
Ingredients
- 3/4 tsp kosher salt
- 1 pound(s) ground sirloin
- 1/2 pound ground Sirloin
- 1/4 cup dry bread Crumbs
- 1/2 cup steak sauce
- 1 large egg
- 1/2 tsp ground black pepper
- 4 hamburger buns
- 4 ounces sliced blue cheese

Preparation
In a bowl, add chuck, sirloin, bread crumbs, steak sauce, eggs, salt, and pepper, and mix gently with fork.

Form 4 patties out of this mixture.

Cook the hamburgers patties on each side, then cover with aluminium foil.

Cut the sides of the bun, then grill in a stove-top grill until toasted.

Place patties and a slice of blue cheese in each bun.

Serve hot.
