I’ll never buy store bought yoghurt again!

Success! After a few attempts at yoghurt I’ve finally found a way to make the thickest, creamiest, nutritious yoghurt with just TWO ingredients. No sweeteners, thickeners or emulsifiers.

A litre of High Protein Full Cream milk inoculated with 55g good quality yoghurt such as Jalna Biodynamic, heated and kept at temperature overnight and you have the thickest yoghurt ever. I’m thinking the fat and protein content of the milk affects the thickness as well as the thickness and high probiotic content of the starter yoghurt.

I followed the Creamy Vanilla Yoghurt recipe below but I skipped all the ‘other’ ingredients and just kept it simple with milk and yoghurt. See the brands I used below.

Easter Chocolate ‘Feed A Crowd’ Cake from Thermomix Cookidoo is Dairy Free, Egg Free and oh so light and delicious. I knocked down the sugar by half making it rich and chocolatey without being overly sweet.

The secret ingredient is a little balsamic flavour added for depth of flavour and to assist the bicarbonate soda as a raising agent (think lemon juice + bicarbonate fizz when you add them together).

Fifteen minutes and little inclination on a Saturday afternoon resulted in seven jars of Lemon Curd.

Made from all organic ingredients and the perfect foil to toasted sourdough for breakfast in the morning. Yum!

Chicken & Pesto Risoni from Cookidoo is one of my favourite comfort foods. I cheated and used leftover roast chicken instead of chicken thigh. Cooked in 15 minutes and into the Thermoserver for dinner tonight. Just thought I’d do a little ‘quality control’ just to make sure it’s ok 😜

Rava Payasam is an Indian milk pudding often eaten at festivals and special occations. Made with semolina, eggs and sweetened condensed milk with a subtle hint of rose water. Topped with nuts and sultanas sautéed in a little ghee. It’s a little bit of sweetness after a spicy curry.

Spicy Tomato Chutney and Ghee

We had the chutney last night with Chicken Tikka Masala and Pilau Rice. Such a great flavour (not too spicy as I didn’t add all the chilli) and it would also go really well with eggs or as a dip.

Ghee is an Indian staple and is used in many of the recipes in the cookbook. Butter is the only ingredient and it’s a set-and-forget recipe, taking 2 hours to complete. The dairy solids settle to the bottom of the ghee which are removed by straining them off through a nut bag, muslin or clean chux cloth. By removing the dairy solids the resulting ghee is then lactose free, but not dairy free as the remaining ghee is basically butter fat.

Healthy Banana Bread
If you love banana bread but are wanting to make healthier choices, then this is the new banana bread for you!
Packed full of fibre from buckwheat flour, oats and bananas, just one slice will keep you satisfied for longer than regular banana bread.
It’s also a recipe to swap and change depending on your dietary requirements. Leave out the oats if you prefer gluten free, swap out the natural yoghurt for coconut yoghurt for dairy free, or use any of the unrefined sugar alternatives such as honey, date paste or apple sauce, in place of coconut sugar .
It’s up to you and your nutritional needs.

Coconut and Beetroot Balls
I am an avid fan of beetroot, especially raw beets that contain more vitamins, minerals and antioxidants than cooked beets. Raw beetroot is high in dietary fibre which is great for feeling fuller for longer as well as assisting in good digestive health.

Using cacao and Medjool dates in the recipe masks the ‘earthiness’ of the beets so it doesn’t overpower the overall flavour.

And don’t you just love the colour!

Hazelnut Chocolate Spread (aka ‘healthy’ Nutella)
Contains just four ingredients and none of the nasties found in store bought products.

Hazelnuts are a great source of healthy fats, magnesium and vitamin B6 and cacao is high in potassium and antioxidants.

Substitute cows milk in the recipe with any nut or seed milk for dairy free and vegan.

Hazelnut Chocolate Spread is delicious between pikelets 😋 on pancakes with chopped banana, or as a dip with fresh fruit.

Crispy roast potatoes are steamed in the Thermomix Varoma for 25mins/Varoma/speed 3 until just tender. Then, (this is the secret....) keep the Varoma lid on and give the potatoes a good shake to make them fluffy. Place on a baking tray, drizzle with olive oil, a little salt and roast 40 mins at 200C, turning once. Crispy and crunchy, these are the best roast taters!

Absolutely delicious!
I used the Thickening function on the TM6 to make the semolina custard and it turned out perfect.
