As a GP I know healthy food is essential for a healthy life.

This Broccoli Salad is a family favourite from the Cookie and Kate website.

The honey, cranberries and cheese make this really delicious. Its a great way to get kids to eat salad.
I often serve this with chicken cooked on the BBQ, but you can add any protein you like. Because the salad is so tasty you don’t have to worry about the meat too much.

Broccoli Salad, from Cookie and Kate.

Ingredients
1 large broccoli 🥦 - thinly sliced and chopped.
1/2 cup raw sunflower seeds or slivered almonds (or any other nuts)
1/2 cup finely chopped red onion
1/2 cup grated cheddar cheese 🧀
1/3 cup dried cranberries ( or other tart dried berry)

🍯 mustard dressing
1/3 cup EVOO
2 tbs apple 🍎 cider vinegar
1 tbs Dijon mustards
1 tbs honey 🍯
1 medium clove of garlic, pressed or minced
1/4 tsp salt 🧂

Blanch the broccoli - by pouring hot kettle of water over for 1-2 minutes
Toast the seeds/ nuts very carefully - they burn quickly
Mix the broccoli 🥦 onion cheese 🧀 and cranberries in a serving bowl
Combine the dressing ingredients in a jar and shake until well mixed
Pour the dressing over the salad. It tastes better if you marinate for 20 minutes before serving.
