Who else loves their slow cooker?
For tonight’s dinner I’ve layered the base of our slow cooker with 🍠 & 🥔 added some lamb shanks & 🎃, then topped with a little garlic & rosemary infused olive oil, fresh rosemary & 🧄!
All I need to do is pop the veg in the oven to crisp up an hour before serving (you can skip this but we like ours crispy) and steam some beans, zucchini, 🌽 🥕 🥦 cauliflower & zucchini!
There will also be leftover meat & veg I’ll use in another nights dinner too 🙌💫

The kids all get to suggest dinners for the week. Miss 17s choice was burrito bowls, so this was our version of “help yourself”. We love these style meals as it means they suit everyone’s tastes 😋
Ignore the fact the kids set the table and forgot a table cloth 😆🤭🤷♀️ didn’t change the yumminess!

Lots of leftover egg yolks from yesterday’s cooking! So we made Lemon Egg Yolk Cookie dough last night and popped in the fridge 🍋 today’s morning tea ❤️ so yum 😋

We have found a little normalcy in lockdown goes a long way. So Laura continues to make lunch nightly, tomorrow’s lunch is….
🔅 chicken tender and halloumi salad
🔅 sour cream for dipping
🔅 Apple
🔅 Choc lamington bliss balls
She’s made some overnight oats for breakfast and will have some yoghurt & fruit if she needs a little more 😋

Laura decided that after not packing lunches while homeschooling the last 2 days, has lead to poor food choices and not enough food to sustain her (my kids have been organising themselves daily).
So she just came to me and said “mum I’ve packed my lunch for tomorrow”
✔️mango yoghurt
✔️ chicken salad GF wrap
✔️ capsicum
✔️ frozen berries because we’ve run out if fresh

Get your kids in the kitchen….. This little cherub loves to help, tonight she’s in charge of a salad 🥗 I think she’s done a great job! She even has halloumi on the sandwich press cooking 😋

Last nights pork - the finished deliciousness 🤤
You can serve the pork sliced, with veg on the side, but we like to break it up like pulled pork and stir through additional veg (we added bok choy, broccoli & snow peas - using up all the leftover veg before a fresh shop tomorrow).

With the weather turned cold and wet, it’s slow cooked deliciousness time!
Tonight we’re having slow cooked pork & apples 🍏 it’s simply -
🧅 onion
🥕carrot
🍏 apple
✔️zucchini
(I’ve popped some chunks of pumpkin underneath that needed using up as well)
➡️ chop it all up
➡️ pop pork in and place apple slices between
➡️ drizzle honey and sprinkle cinnamon
➡️ come home to a delicious pork cooked in apple sauce 🤤
➡️ serve with whatever veg you like 👌 I’ll steam some greens to go with it when I get home tonight 🥦

I am a mum of 4 and understand the struggles and guilt that sometimes sneak in, when it comes to the health and nutrition of our children. I also know that we as mum’s often come last on the list of things to take care of!
This is why Women’s and Children’s Health is something that I am really passionate about. They often go hand in hand and when children are unwell, suffering a health condition or disease, or just keeping us totally busy and run off our feet - our health tends to suffer and we just keep on going!
As a mum of an ADHD child & a child with Autism, I see the impact children’s health conditions can have on the whole family unit and as I said mum’s health in particular! 6 years ago I hit rock bottom, I was so sick I could barely function - I could barely eat, get out of bed and felt like my body was shutting down. I felt like no-one understood, that doctor’s thought it was all in my head, that I was letting my family down by being sick and anxiety crept it. I was restricting more and more foods, everything made me feel bloated, constipated and nauseas, food intolerances kept increasing till I could stomach about 5-6 foods! A gall bladder removed, diagnosis of IBS & Food Intolerances later and a few years of restricting foods on the FODMAP diet - I realised I couldn’t go on! I became a nutritionist healed my gut, my relationship with food, my relationship with myself and no longer suffer with the severe health issues that plagued me!
I love working with families to build a genuine trust & understanding, of what is going on for them, so I can support and educate them to make lifelong changes. I would love to work with you!
