SALAD INGREDIENTS
1 Pumpkin peeled & cubed
1 cup of quinoa rinsed
1 pomegranate, seeded
½ cup of pistachios toasted & chopped
2 tablespoons of olive oil
salt & pepper to taste
DRESSING
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon honey
• Roast the pumpkin with olive oil, salt, and pepper at 200°C for 25–30 minutes, or until tender.
• Cook the quinoa according to package directions and let it cool.
• In a large bowl, combine the roasted pumpkin, cooled quinoa, pomegranate seeds, and pistachios.
• Whisk the dressing ingredients together and pour over the salad. Toss gently to combine.
