Cook with us 🫣✨comment recipe and I’ll send this recipe to you or see below! I added way too much ginger to this original recipe so have tweaked it below. It’s based off a thermomix recipe but you don’t need a thermo to make it!
We added collagen to up the protein (and I find it makes it chewy!)
Ingredients
• 100g unsalted butter or ghee, softened
• 50g maple syrup
• 80g coconut sugar
• 1 egg
• 2 tbsp Unrefined Nutrients Collagen
• 3 tsp ground ginger
• 1 tsp mixed spice
• 380g gluten-free plain flour
• 1 tsp bicarb soda
• Pinch of salt
To decorate
• Icing mixture + water
• Funday lollies ✨
Method
1️⃣ Preheat oven to 170°C fan-forced and line baking trays.
2️⃣ Cream butter (or ghee), maple syrup and coconut sugar until smooth.
3️⃣ Add egg and collagen, mixing well to combine.
4️⃣ Stir through ginger, mixed spice, bicarb soda and salt.
5️⃣ Gradually fold in flour until a soft dough forms.
6️⃣ Roll dough between baking paper and cut into shapes.
7️⃣ Bake for 10–12 minutes until lightly golden.
8️⃣ Cool completely before decorating with icing + lollies (the best part 🥰).
