So we’re serving you a warm, grounding, slightly sweet recipe that is actually super satisfying + light on the tum 🫶
Summer Spud Breakfast Recipe 👉🏻
Ingredients:
• 1 medium sweet potato
• Coconut yoghurt or Greek-style yoghurt
• Fresh peach or nectarine slices
• Fresh berries (strawberries, blueberries, or raspberries)
• H**p seeds
• Chia seeds
• Cinnamon
• Raw honey or maple
• Fresh mint (optional)
• Pinch of pink salt
Method:
1. Roast sweet potato at 200°C for 40–45 mins until soft and caramelised.
2. Slice open and gently mash the centre.
3. Fill with yoghurt.
4. Top with stone fruit + berries.
5. Sprinkle seeds, cinnamon, honey/maple + mint.
6. Finish with a tiny pinch of salt to balance sweetness + minerals.
