A quick meal 😃 using medicinal chef curry paste.
This was so delish !!! I ate 3 times this week.
Super easy, super tasty and super nutritious.
➡️ first poach 2 chicken thigh fillets in 2 cups of water, 1/2 onion, 2 cloves of garlic, I am piece of ginger and turmeric, and 1/4 of a lemon. Keep broth, (strain)
➡️ in a sauce pan , cook soba noodles for 4 minutes, then refresh under cold water.
➡️ in sauce pan add 3 tablespoons of curry paste and fry off for 6 min.
➡️ add the strained chicken broth.
➡️ add 2 tablespoons of sesame oil, and 4 tablespoons of tamari.
➡️ add 1 tin of coconut milk.
➡️ add broccolini and chicken and cook for 4 min.
➡️ in a bowl put in your cooked soba noodles, then pour of soup mixture.
➡️ serve with a slice of lemon and a sprinkle of shichimi togarashi seasoning 😘
