Did you know most supermarket cinnamon is Cassia-the cheaper, stronger variety that’s much higher in coumarin?
The other common type is Ceylon (aka “true” cinnamon), from the Cinnamomum verum tree. It’s lighter, milder… and contains around 250x less coumarin than Cassia.
Considering coumarin has a strict daily limit, that’s a pretty big deal.
Cinnamon has long been valued for supporting blood sugar balance and metabolic health, but quality matters.
We’ve always used Ceylon cinnamon.
