We're experiencing a bit of a heat wave in Melbourne and nothing beats a cold soup to freshen things up. Tarator is my favorite brunch and is a staple across most Mediterranean countries and is only 6 carbs. Different countries have different names for this yoghurt and cucumber delight.. I've chosen to call it Tarator from the place I first tried this ... in Macedonia. Be sure to include full fat ingredients to make sure the taste is superb.. if you can, make your own yoghurt.. full fat milk and mild fresh yogurt is terrific. This was my staple, go to, breakfast when travelling the villages in search of recipes.
It takes just 5 minutes to make but does benefit from sitting in the fridge for the flavors to develop.. I always make a batch to last a few days.

1 kg Good Yoghurt (Greek is good)
200 gm Cream (Kaymaki if you can get it)
500 gm Shaved Cucumber
1.2 lt iced water
1 cl Minced Garlic
3 tsp Salt
1tsp White Pepper
Zest of 1/2 a lemon
Juice of 1 lemon
1/2 tsp Chopped Dill
1 tsp Chopped Parsley
Chilli Flakes to taste.(optional)

Mix it all together and let sit for 15 minutes to infuse.
I make mine the night before so its ready for breakfast... I dress it with ice cubes and some finely sliced mint.
Best slurped directly from the bowl... as a breakfast entre before bacon and eggs.

A new study from Deakin University in Australia finds that a Mediterranean way of eating can help people with severe depression.
After just 12 weeks 1/3 of patients in the study with Depressive Disorders had measurable improvement in mood and symptoms. The diet has a major effect the gut microbiome which is known to affect our brain chemicals. It is not a cure but if it helps people feel better... its even more reason to eat ... On the flip side... it doesn't explain why I have so many crazy wog friends :)
