Delicious bread doesn’t have to be difficult!
Damper is a classic, easy-to-make bread that you can customise with your favourite flour, flavours, herbs, and spices.
Ingredients
2 cups self-raising flour (Or use gluten-free plain flour with ½ teaspoon baking powder and ¼ teaspoon salt)
1 cup plain flour, pinch of salt
Water, added gradually (just enough to form a firm but moist dough).
Optional flavour additions: 1 tsp cinnamon (great with almond and coconut flour), Seeds, grains, garlic, olives, sultanas, rosemary, or any herbs/spices you love
Method
Preheat oven to 180°C (fan-forced).
In a large bowl, combine the flours and salt.
Gradually add water, mixing gently until you have a firm but slightly moist dough.
Lightly oil a bread pan and place the dough inside.
Bake for about 40 minutes, or until golden brown, and it sounds hollow when tapped on the bottom.
Let cool slightly before slicing — best enjoyed warm with butter!

After what feels like a lifetime on the beautiful Far North Coast, I’ve packed up my life and headed north to the lush Sunshine Coast hinterland — to a stunning property in Kin Kin that I now share with the gorgeous souls I call family. 🌿
As I begin to settle into this new chapter, it feels like the perfect time to open my heart and hands to the wonderful community here and return to my healing work once again.
I specialise in supporting people as they move through stress, anxiety, and all the ways these experiences can manifest in our bodies and lives.
