This easy recipe is good for anyone who needs a gluten free, dairy free, vegan or vegetarian diet. Chickpea flour is sometimes sold as besan flour.

Mediterranean Chickpea Frittata 🍅🫒
Serves 2

Ingredients

¾ cup chickpea flour
¼ teaspoon baking powder
¾ cup water
¾–1 cup diced tomato
1 loosely packed cup chopped baby spinach
¼ cup sliced Kalamata olives
¼ cup loosely packed chopped basil (plus extra for garnish)
1 tablespoon extra virgin olive oil
1 cup sliced avocado

Method
In a large bowl, whisk together the chickpea flour, baking powder and water until smooth. Add the tomatoes, spinach, olives, and basil and mix well.

Heat the oil in a pan over medium-high heat. Add the mixture, cover, and cook for eight to 10 minutes until the bottom is golden.

Cover the pan with a large upside-down plate, place your hand on it, and quickly turn the frittata over on the plate before gently sliding it back onto the pan. Cook for an additional five to eight minutes until fully cooked.

Top with sliced avocado and garnish with basil, if desired. Enjoy!

Meat quality matters because how an animal is raised directly affects the nutrients and inflammatory signals in the food you eat.

Animals fed their natural diet produce meat that better supports gut health, hormone balance, metabolic and immune function.

Grain-fed animals are commonly fed wheat and other grains.
