Date, tahini and chocolate cake (school lunch friendly)

ABSOLUTELY PACKED with fibre, antioxidants, iron and flavour. This choccy cake will quickly become a family staple and a nutrient dense lunchbox addition. Make it and share your pics!

Recipe:
3/4 cup dried dates
1/2 cup milk of choice (I used cows milk)
1/4 cup extra virgin olive oil
1/3 cup tahini
1 tsp vanilla extract/essence/paste
1/3 cup raw cacao
3 eggs
1/4 cup brown sugar
1/2 cup plain flour
1 tsp baking powder
1/4 tsp baking soda
100g 85% dark chocolate for icing
100s and 1000s (I used Coles brand)

1. Preheat that oven to 180 degrees C and line your round springform baking pan.
2. Place dates into a bowl, warm the milk and pour over the dates leaving them to soak for a few minutes to soften.
3. Blitz dates and milk in a food processor for a smooth paste.
4. Pour the date paste into a big mixing bowl and stir in tahini, vanilla and extra virgin olive oil. Mix well.
5. Add the flour, cacao, baking powder/soda and stir until combined
6. In a separate bowl, crack the eggs and add the brown sugar. Beat on high for 4-5 minutes until light and fluffy.
7. Fold the egg mixture into the chocolate mixture.
8. Pour mixture into baking pan and bake for 25 mins or until it’s springy on top.
9. Remove from oven and let cool.
10. Melt 100g of chocolate, I did mine in the microwave, then drizzle over the top of cooled cake. Add 100s and 1000s for funnnn.

I’m reframing how we look at iron rich foods.

You can have iron rich foods in your baby’s meal, but if there’s a small amount of them…then it’s not going to give your baby the iron they desperately need.

Clarifying further the protein percentage - if you look on a nutrition information panel of a product - you want to see at least 10 grams of protein per 100g. This amount of protein will give you between 2-3mg of iron per 100g of protein. Give or take a little depending on the iron rich source. But this something I have worked with when I have designed every one of the Petite Meal Co meals.

Understanding where iron actually comes from is one of the most important parts of starting solids.

The most common food groups where iron is found is meat, fish, poultry, organ meat, legumes and fortified cereals.

When you look at the baby food aisle you’ll often notice something:

+ lots of vegetables
+ lots of fruit
+ low protein from mentioned food groups

Iron isn’t optional when starting solids. In fact, this is the time when your baby’s brain and body grow the fastest. They need the right nutrients in the right amount to support that.

Your baby needs 11mg of iron a day from 7-12 months. None of the baby meals in this series would contribute meaningfully to meet that daily intake for your baby.

Before you spend 24 hours simmering bones for your baby, read this.

Bone broth is often hyped as a “must-have” for gut health and starting
solids... but the reality is, it’s just a flavour base. No magic. And definitely not an iron rich food.

If you love making it, go for it. But if it’s adding to your mental load, skip the simmer and grab a store bought one.

Sending you into the week with some meal inspo for your fam. Now that I’ve started working outside of the home and rushing home to pick kids up PLUS cook a quick meal is exhausting me really quickly.

Some of these meals are obviously longer cooks e.g. roast cook but for most I’d say 25 mins including prep.
