ROASTED CAPSICUM, CHICKEN AND BEAN SALAD 🥗

INGREDIENTS //
120g cous cous
2 red capsicum
400g cannellini beans
1 head of broccoli
500g chicken mince (optional)
ÂĽ red onion, diced
ÂĽ tsp paprika
ÂĽ tsp chilli flakes
ÂĽ tsp turmeric
1/4 cup parsley
1/4 cup coriander
1/4 cup dill
100g feta
For the dressing:
2 tsp dijon mustard
ÂĽ cup EVOO
1 tbsp honey
METHOD //
Cook the couscous according to the instructions on the packet.
To a tray for the oven or air-fryer, add sliced red capsicum and the drained cannellini beans. Cook at 200 degrees until soft and the beans are a little crispy.
Meanwhile, finely chop the head of the broccoli and set aside. Add the spices to a pan with the olive oil and when hot, add the chicken mince (optional). Cook until brown.
Combine all the ingredients in a large bowl and top with parsley, dill and coriander. Sprinkle the feta and dressing over the salad when ready to eat.
