🌟 Meet Hedy, Our Community Care Group Leader!

Hedy, originally from Beijing, moved to Melbourne after becoming a registered nurse. She discovered weExplore wellness center, a nonprofit focused on holistic health, and became part of the volunteer team. Hedy is deeply grateful for the support she received during the pandemic, and in 2022, she joined the center full-time to give back.

weExplore’s team of professionals, including nurses, doctors, and counselors, helps those in need through food drives, emotional support, and community activities. Hedy’s journey has taught her that giving brings deeper joy than receiving, and she is dedicated to spreading love and hope through her work.

Korean Japchae

A bite of pure comfort — chewy glass noodles coated in fragrant sesame oil, tossed with colorful veggies, and bursting with sweet-savory Korean flavor 🇰🇷💛

🥢 What You’ll Need:
500g Korean glass noodles (soak & boil, then rinse in cold water)
250g onion, sliced
600g zucchini, julienned (not too thin)
200g red bell pepper, julienned
500g carrot, julienned
1 head of garlic, minced
150g enoki mushrooms
Sesame oil, soy sauce, salt
Toasted sesame seeds

🔥 How to Make It:
1️⃣ Heat sesame oil over medium heat, sauté the onions till soft.
2️⃣ Add garlic, then toss in carrots, peppers, and zucchini — stir-fry until slightly tender.
3️⃣ Season lightly with salt and add enoki mushrooms.
4️⃣ Cut the noodles into shorter lengths, mix with the veggies.
5️⃣ Add soy sauce and a drizzle of sesame oil — toss everything together till glossy.
6️⃣ Finish with a sprinkle of toasted sesame seeds ✨

This Sunday, our amazing volunteers came together once again to prepare nutritious food packs for our community. Each moment shared—each smile, each helping hand—fills our center with gratitude and joy.
