🥔✨ Creamy Sweet Potato Toast ✨🥔
A quick, wholesome twist on breakfast or snacks, warm, toasty sweet potato slices topped with creamy sunflower seed butter and tangy coconut yoghurt.

Servings: 2
Time: 15 mins

You’ll need:

1 large sweet potato

1/4 cup sunflower seed butter

2 tbsp unsweetened coconut yoghurt

How to make it:
1️⃣ Slice sweet potato lengthwise into 1/4-inch “toast” slices.
2️⃣ Toast twice in a toaster until golden brown or broil in the oven for 3–6 mins per side.
3️⃣ Let cool slightly, then spread on sunflower seed butter and dollop with coconut yoghurt.

💡 Tip: Sprinkle h**p, flax, or chia seeds for extra crunch. Store leftover slices (without toppings) in the fridge for up to 3 days, then re-toast to enjoy again.
