Smoked Salmon & Feta Omelette 🥚✨
Serves 1 · 5 mins
Quick, elegant breakfast that feels fancy but takes minutes.
You’ll need:
• 2 eggs
• 2 tbsp fresh dill (divided)
• 1 tsp butter
• 2 tbsp crumbled feta
• 60 g smoked salmon
How to:
1. Whisk eggs with half the dill.
2. Melt butter in a non-stick pan over medium heat, pour eggs in, cook until almost set.
3. Add feta to one side, fold omelette, slide onto a plate. Top with smoked salmon & remaining dill. Enjoy!
Notes:
• Leftovers keep 2 days in the fridge.
• Dairy-free: omit feta + use dairy-free cheese and coconut oil.
• Extra: add capers or thin red onion.
• No dill? Try parsley or chives.
