🍅 Creamy Roasted Tomato Soup 🍅
Serves 4 • Ready in 1 hour

Ingredients
🔸7 tomatoes, quartered
🔸2 sweet onions, chopped
🔸4 garlic cloves, peeled
🔸1 tbsp olive oil
🔸2 cups veggie broth
🔸Thyme, oregano & cayenne
🔸1 tbsp apple cider vinegar
🔸½ cup basil, chopped
🔸1 cup almond milk
🔸½ cup baby spinach
🔸Salt & pepper to taste

Directions
1️⃣ Roast tomatoes, onion & garlic at 210°C for 40–50 mins.
2️⃣ Add to a pot with broth, herbs & vinegar. Stir in almond milk.
3️⃣ Blend until smooth, then return to pot.
4️⃣ Finish with fresh spinach & enjoy with bread. 🥖✨

✨ A beautiful pause before the year’s end! ✨

On Saturday I had the absolute joy of sharing a deeply nourishing women’s circle and sound healing with my dear friends Mandy, Jordana and Katie, lovingly held by the inspiring Lesly Ciro💖

It was a space to slow down, soften and reflect — to gently release what no longer serves us, honour all that 2025 has brought, and sit in gratitude and connection. Through mindful movement, calming sound healing, soothing aromatherapy and heartfelt reflection, we created room to breathe, reset and set gentle intentions for the year ahead.

There is something so powerful about gathering with women — feeling heard, seen and supported — and leaving lighter, nurtured and inspired ✨

Strawberry Coconut Oatmeal Muffins ✨🧁

Wholesome, lightly sweet, and perfect for breakfast or snacks. These muffins are filled with oats, coconut, and fresh strawberries, simple, nourishing, and satisfying.

Servings: 12
Time: 40 mins

Ingredients
• 1 3/4 cups full-fat coconut milk
• Maple syrup
• Vanilla extract
• Ground flax seed
• Rolled oats
• Unsweetened shredded coconut
• Baking powder
• Fresh strawberries, chopped

Directions
1️⃣Preheat oven to 190°C (375°F) and line a muffin pan.
2️⃣Mix coconut milk, maple syrup, vanilla, and flax. Let sit for 5 minutes.
3️⃣In another bowl, combine oats, coconut, and baking powder. Add the wet mixture and fold in strawberries.
4️⃣Divide into muffin cups and bake for 24–28 minutes, until golden and firm. Let cool before serving.

Notes & swaps
✨Store in the fridge for up to 3 days or freeze for a month.
✨Add cinnamon or a pinch of salt for extra flavour.
✨Swap strawberries for blueberries or raspberries.
✨Use honey or agave instead of maple syrup.
