Strawberry Coconut Oatmeal Muffins ✨🧁
Wholesome, lightly sweet, and perfect for breakfast or snacks. These muffins are filled with oats, coconut, and fresh strawberries, simple, nourishing, and satisfying.

Ingredients
• 1 3/4 cups full-fat coconut milk
• Maple syrup
• Vanilla extract
• Ground flax seed
• Rolled oats
• Unsweetened shredded coconut
• Baking powder
• Fresh strawberries, chopped
Directions
1️⃣Preheat oven to 190°C (375°F) and line a muffin pan.
2️⃣Mix coconut milk, maple syrup, vanilla, and flax. Let sit for 5 minutes.
3️⃣In another bowl, combine oats, coconut, and baking powder. Add the wet mixture and fold in strawberries.
4️⃣Divide into muffin cups and bake for 24–28 minutes, until golden and firm. Let cool before serving.
Notes & swaps
✨Store in the fridge for up to 3 days or freeze for a month.
✨Add cinnamon or a pinch of salt for extra flavour.
✨Swap strawberries for blueberries or raspberries.
✨Use honey or agave instead of maple syrup.
