What we eat Wednesday 👏 Lamb Koftas

These yummy little Lamb Koftas are full of middle eastern flavour. Spices, fresh herbs and just the right amount of cinnamon make them a family favourite in our house. Despite all the herbs and spices the kids love these. We wrap them in toasted pita bread and serve with a fresh salad, tzatziki or hommus dip- perfect for a weekend dinner

Ingredients 🧅
Lamb Kofta
1 red onion
Handful of fresh coriander leaves
Handful of fresh mint leaves
Handful of fresh parsley leaves
1 tsp dried oregano
1 tsp ground cumin
1 tsp sweet paprika
Salt and pepper to taste
1 kg lamb mince

For the salad 🥗
10 cherry tomatoes chopped finely
1/2 cucumber diced finely
1/2 red capsicum diced
1/2 red onion finely diced
handful of fresh parsley, chopped
handful of fresh mint. chopped
handful of fresh coriander, chopped
Juice of half a lemon
1/4 cup olive oil, or to taste
1/4 cup toasted pine nuts (pop in the oven on a baking tray for about 8 minutes to toast)

Method:
Add the onion, fresh herbs, dried herbs, salt and pepper to a food processor or thermomix, chop very finely. You may need to scrape the sides and repeat.
Add the lamb mince and mix well until herbs are all combined with the lamb. Thermomix speed 4 reverse
With wet hands form the lamb mince into rolls about 5-6cm long and set aside on a plate
Heat a bbq or pan with a drizzle of oil, add Lamb Koftas to heated pan. Cook until Kofta’s browned and cooked through
While koftas are cooking, combine all salad ingredients in a bowl, toss to combine.
Serve warm Koftas with toasted pittas or wraps, tzatziki or hommus dip and the salad

Masterclass: It's on again!

I am very excited to be able to offer my free masterclass again - ADHD & Food: Nourishing the brain for better focus and behaviour

The last time I hosted the masterclass it was a tremendous success. Many parents tuned in and left with valuable knowledge and insights.

We often underestimate the affect food can have on our children, their behaviour, emotions, sleep, and their ability to concentrate at school. The effect food is having on our health is an undervalued component of our health care system.

I want to share with you tips to nourish your children, and the best food to help boost their focus, concentration and behaviour. I look forward to sharing my experience, knowledge and tips to support your child with ADHD or other learning or behavioural concerns.

What we eat Wednesday - It's been a little while, but the the fun of sharing my favourite recipes each week is back! 👏

Party Pies are a great winter warmer, even for the big kids of the house! The trouble with supermarket party pies is they are full of artificial colours, additives and preservatives that are not the best for our health.
Next time you pick up a packet of party pies in the supermarket, turn the packet over and look at the ingredients.

How many ingredients are actually in the party pies?
Waaayyyyy too many 🤯
You will come across ingredient names that you may not even recognise 🤯
It's these ingredients that we should be avoiding for the benefit of our health and our children's' health. Their little bodies just can't process these artificial ingredients.

Make your own party pies this winter, with real ingredients, and bask in the compliments of how delicious tasty they are 😋

Ingredients: 🥧
1 tbsp Olive oil or Ghee
1Kg Casserole Beef- , finely chopped or chopped in Thermomix 20 secs, speed 6
1 brown Onion- diced thinly
1 Garlic clove - crushed
1 tbsp vegetable stock paste or 1 tbsp organic stock powder
1 heaped tbsp corn flour
1 tbsp Worcestershire sauce
2 tbsp tomato sauce or relish (home made is even better)
1/2 tsp curry powder
Sprinkle mixed herbs
Salt and pepper to taste
5-6 sheets of Puff Pastry or batch of home made puff pastry

Method: 🥧
Pre-heat oven 220' c
Remove pastry from freezer to thaw or roll out home made pastry into thin sheets
Heat large pot, add oil or ghee
Add diced onion and garlic, fry for a few minutes until browned
Add Beef and fry on medium heat, stirring continuously
Add vegetable stock paste, corn four, Worcestershire sauce, tomato sauce, curry powder, mixed herbs, salt and pepper. Stir well to combine and cook for 15 minutes.
Cut pastry into circles to fit 12 hole muffin tin. Lay pastry into each muffin tin as base of pie
Spoon mixture into muffin holes
Cut circles of pasty to fit top of muffin as lid, place into position
Baste each party pie with milk
Cook for 20 - 25 minutes until golden brown
Enjoy!
