What we eat Wednesday 👏 Lamb Koftas
These yummy little Lamb Koftas are full of middle eastern flavour. Spices, fresh herbs and just the right amount of cinnamon make them a family favourite in our house. Despite all the herbs and spices the kids love these. We wrap them in toasted pita bread and serve with a fresh salad, tzatziki or hommus dip- perfect for a weekend dinner
Ingredients 🧅
Lamb Kofta
1 red onion
Handful of fresh coriander leaves
Handful of fresh mint leaves
Handful of fresh parsley leaves
1 tsp dried oregano
1 tsp ground cumin
1 tsp sweet paprika
Salt and pepper to taste
1 kg lamb mince
For the salad 🥗
10 cherry tomatoes chopped finely
1/2 cucumber diced finely
1/2 red capsicum diced
1/2 red onion finely diced
handful of fresh parsley, chopped
handful of fresh mint. chopped
handful of fresh coriander, chopped
Juice of half a lemon
1/4 cup olive oil, or to taste
1/4 cup toasted pine nuts (pop in the oven on a baking tray for about 8 minutes to toast)
Method:
Add the onion, fresh herbs, dried herbs, salt and pepper to a food processor or thermomix, chop very finely. You may need to scrape the sides and repeat.
Add the lamb mince and mix well until herbs are all combined with the lamb. Thermomix speed 4 reverse
With wet hands form the lamb mince into rolls about 5-6cm long and set aside on a plate
Heat a bbq or pan with a drizzle of oil, add Lamb Koftas to heated pan. Cook until Kofta’s browned and cooked through
While koftas are cooking, combine all salad ingredients in a bowl, toss to combine.
Serve warm Koftas with toasted pittas or wraps, tzatziki or hommus dip and the salad
