Your body produces around 75–80% of its own cholesterol, primarily in the liver through a process called endogenous synthesis.

Cholesterol isn’t inherently harmful, it’s a critical structural molecule used to:

Build cell membranes, keeping every cell stable and functional

Synthesise steroid hormones such as progesterone, testosterone, oestrogen, and cortisol

Produce bile acids to digest and absorb fats

Convert sunlight into vitamin D

When cholesterol levels fall too low, it can disrupt hormone production, brain function, and immune regulation.

But here’s the nuance: your body also has built-in mechanisms to clear excess cholesterol when levels rise. One of the most effective is dietary fibre.

Soluble fibre found in oats, chia seeds, psyllium, beans, and fruit pectin — binds to bile acids in the gut. Because bile acids are made from cholesterol, this binding helps carry them out of the body through digestion.
To replace those lost bile acids, the liver draws on cholesterol from the bloodstream, naturally lowering LDL (“bad”) cholesterol.

Guys you need to make this… it’s a sweet potato crusted kale and feta quiche that is great the day you make them but every better the next day.
The base filled around 3 stainless steel 25 cm quiche pans but use whatever you have on hand.

Ingredients
Sweet Potato Crust
7 cups shredded sweet potatoes (about 2 medium)
2 egg whites
2 tbsp flour (use gluten-free flour or cornstarch if preferred)
4 tsp olive oil
1½ tsp salt
½ tsp freshly ground black pepper
Filling
2 shallots, finely sliced
1 tbsp butter or olive oil
4 cups kale, finely chopped (stems removed)
8 whole eggs + 2 extra yolks (the ones that were left from the base)
400 mL pure cream
1½ cups grated cheese (cheddar, gruyère, or tasty)
100 g feta cheese, crumbled (for topping)
Optional: pinch of nutmeg, sea salt, and black pepper to taste
Method
Make the Crust
Preheat the oven to 200 °C (fan 180 °C).
Mix shredded sweet potatoes, egg whites, flour, olive oil, salt, and pepper in a large bowl until evenly coated.
Press the mixture firmly into a greased quiche or pie dish, pushing up the sides to form a crust.
Bake for 25 minutes, until lightly golden and set. Remove from oven and let it cool slightly.
Prepare the Filling
In a frypan, melt butter over medium heat and sauté shallots until translucent.
Add kale and cook for 3–4 minutes until wilted. Remove from heat.
In a large bowl, whisk eggs, yolks, and cream.
Stir in grated cheese, kale-shallot mixture, salt, pepper, and a pinch of nutmeg if desired.
Assemble and Bake
Pour the filling into the pre-baked sweet potato crust.
Scatter crumbled feta evenly over the top.
Bake at 200 °C for 35–40 minutes, or until the centre is just set and the top is golden.
Allow to cool for 10 minutes before slicing.

Serve a chutney and salad
