Back to work and already sick of thinking about what to have for lunch every day?
This is one of my favourite go-to work day lunches 🥗
Balanced, blood-sugar friendly and easy to prep the night before.
Quick Nourish Bowl:
• Leftover roast chicken (or tinned salmon)
• Cooked quinoa or brown rice
• Baby spinach & cucumber
• Olive oil, lemon & sea salt
• Sauerkraut or olives for digestion (but more importantly for taste 😋)
Protein + fibre + healthy fats = steady energy all afternoon
(No 3pm crash 😴😴😴)
