Refreshing, vibrant, and lightly sweetened, this Matcha Mint Iced Latte is the perfect cool-down drink for sunny summer days. Energising, soothing, and effortlessly delicious!

Serves: 1�
Total time: 5 minutes

Ingredients
• 1 tsp matcha powder�
• ¼ cup hot water�
• 1 cup almond or coconut milk�
• Ice�• Fresh mint�
• 1 tsp honey (optional)

Instructions
1. Whisk matcha powder with hot water until smooth.
2. Fill a glass with ice and fresh mint.
3. Pour in matcha and milk.
4. Stir gently and enjoy chilled!

Day 11 of our 12 Days of Summer Recipe Series: Nut Bread! 🌰🍞✨

Crunchy, hearty, and packed with seeds and nuts, this Nut Bread is perfect for breakfast, snacking, or as a base for your favourite spreads. Rich in texture and flavour, it’s a wholesome addition to your summer table!

Serves: 8–10�
Total time: 1 hour 15 minutes + 2 hours resting

Ingredients
• 1 ½ cup rolled oats�
• ½ cup pumpkin seeds�
• ½ cup sunflower seeds�
• ½ cup pecans�
• ¼ cup almonds�
• ⅓ cup sesame seeds�
• ¼ cup ground flaxseed�
• 2 tbsp chia seeds�
• 3 tbsp psyllium husk�
• 1 ½ tsp salt�
• 2 tbsp maple syrup�
• 3 tbsp melted coconut oil�
• 1 ½ cup water

Instructions
1. In a large bowl, combine all dry ingredients and stir well.
2. In a small bowl, whisk together maple syrup, melted coconut oil, and water.
3. Add wet ingredients to the dry mix, stirring until everything is fully soaked.
4. Transfer the mixture to a greased and lined loaf pan. Smooth the top and let sit for at least 2 hours.
5. Preheat oven to 180°C. Bake the loaf for 20 minutes.
6. Remove from the pan, flip upside down onto an oven rack, and bake for another 30–40 minutes.
7. Allow to cool completely before slicing.

Cool, creamy and naturally sweet, these Nice Cream Sundaes are the perfect summer treat. Blend, scoop, top, and enjoy a deliciously refreshing dessert that’s ready in minutes!

Total time: 5 minutes

Ingredients
• 2 frozen bananas�
• 1 scoop vanilla protein powder�
• 2 tbsp coconut yoghurt�
• Splash of almond milk
Toppings: cacao nibs, berries, chopped nuts

Instructions
1. Blend frozen bananas, protein powder, coconut yoghurt, and almond milk until thick and creamy.
2. Scoop into bowls.
3. Add your favourite toppings and enjoy!

Variations:�
• Mix in frozen cherries for a festive, Christmas-y twist.

Day 9 of our 12 Days of Summer Recipe Series: Gluten-Free Pancakes! 🥞✨🍓

Fluffy, golden, and naturally gluten-free, these pancakes are perfect for a sunny weekend breakfast or a sweet summer brunch. Top with nut butter and fresh berries for a deliciously simple start to your day!

Serves: 2–3�
Total time: 15 minutes

Ingredients
• 1 cup almond flour�
• 1 tsp baking powder�
• 2 eggs�
• ⅓ cup unsweetened almond milk�
• 2 tbsp coconut oil�
• ½ tsp cinnamon�
• ⅛ tsp sea salt�
• 3 tbsp nut butter�
• Fresh berries, to serve

Instructions
1. In a bowl, whisk together almond flour, baking powder, cinnamon, and sea salt.
2. Add eggs, almond milk, and 1 tbsp coconut oil. Mix until smooth.
3. Heat a non-stick pan over medium heat and lightly grease with remaining coconut oil.
4. Pour batter into the pan to form small pancakes. Cook 2–3 minutes per side, until golden.
5. Serve stacked, topped with nut butter and fresh berries.

Green tea meets creamy coconut in these bite-sized snowballs. Perfect as a snack, festive treat, or afternoon pick-me-up, they’re easy to make, no-bake, and totally delicious!

Serves: 8–10�
Total time: 10 minutes

Ingredients
• 1 cup desiccated coconut�
• ¼ cup coconut cream�
• 1–2 tsp matcha powder�
• 1–2 tbsp maple syrup

Instructions
1. In a bowl, combine coconut, coconut cream, matcha and maple syrup. Mix until well combined and sticky enough to form balls.
2. Roll the mixture into small snowballs.
3. Optional: chill in the fridge for 10–15 minutes for a firmer texture.
4. Serve and enjoy!

Day 7 of our 12 Days of Summer Recipe Series: 5-Minute Cinnamon Scrolls! 🍌✨🥣

Soft, warm, spiced and irresistibly gooey, these 5-Minute Cinnamon Scrolls come together in minutes and bake to golden perfection. No yeast, no rising time… just mix, roll and pop them in the oven for the quickest festive treat!

Serves: 1–2�
Total time: 5 minutes prep + bake time

Ingredients
Bread:�
• 1 banana�
• 6 tbsp spelt or gluten-free flour�
• 1 tsp baking powder�
• Splash of almond milk
Filling:�
• 1 tsp chai powder or cinnamon�
• 1 tbsp vanilla protein or collagen (optional)�
• 1 tsp monk fruit sweetener�
• Splash of milk (to combine)�
• Coconut oil (for brushing)
Caramel Sauce:�
• 1 tbsp coconut sugar�
• 1 tbsp coconut milk or cream�
• Pinch of salt

Instructions
1. Preheat the oven to 180°C and line a small tray or dish with baking paper.
2. Make the dough: Mash the banana in a bowl. Add flour and baking powder, mixing to form a soft dough. Add a splash of almond milk if needed.
3. Roll it out: Lightly flour your surface and press or roll the dough into a rectangle.
4. Make the filling: Combine cinnamon/chai, monk fruit sweetener and protein/collagen (if using) with a splash of milk to form a paste.
5. Assemble: Brush the dough with coconut oil, spread the filling evenly, then roll into a log. Slice into scrolls and place them on the tray.
6. Bake: Bake for 10–12 minutes, or until the scrolls are puffed and lightly golden.
7. Caramel drizzle: Mix coconut sugar with coconut milk and salt. Warm briefly (stovetop or microwave) until melted and caramel-like.
8. Serve: Drizzle over the warm scrolls and enjoy!

Say hello to your new festive-season favourite, all the cosy flavours of classic eggnog, but light, creamy and totally dairy-free. This smoothie is naturally sweet, packed with warm spices and perfect for those sunny summer mornings or a holiday-inspired afternoon pick-me-up!

Serves: 1–2�Total time: 5 minutes

Ingredients:�
• 1 frozen banana�
• ½ cup cashews (soaked 2 hours)�
• 1 cup almond milk�
• 1 tsp vanilla essence�
• ½ tsp cinnamon�
• ⅛ tsp nutmeg�
• Pinch of Celtic sea salt

Instructions:
1. Add all ingredients to a blender and blend until smooth and creamy.
2. Pour into a chilled glass.
3. Sprinkle cinnamon on top and enjoy!

Day 5 of our 12 Days of Summer Recipe Series: Coconut Berry Frozen Bark! 🥥❄️🍓

Creamy, crunchy and perfectly refreshing, this Coconut Berry Frozen Bark is the ultimate hot-day treat. Made with probiotic-rich coconut yoghurt and naturally sweet berries, it’s a yummy dessert you can whip up in minutes… then keep in the freezer for whenever you’re after a choccy hit!

Here’s how to make it:
Serves: 4–6�
Total time: 5 minutes + freeze time

Ingredients:�
• 1 ½ cups coconut yoghurt�
• 1 tsp vanilla�
• 1 tbsp maple syrup�
• ½ cup berries�
• 2 tbsp chopped pistachios�
• Sprinkle of cacao nibs

Instructions:
1. Mix the coconut yoghurt, vanilla and maple syrup until smooth.
2. Spread onto a lined tray about 1 cm thick.
3. Add berries, pistachios and cacao nibs.
4. Freeze for 2 hours.
5. Break into pieces and enjoy!

Variations:�
• Mix in collagen powder for a protein boost.�
• Try different toppings like mango, toasted coconut or crushed almonds.
