Krispy Fried Chicken seasoning

This is a take on the famous KFC secret blend of herbs and spices. Whilst I don’t think it tastes exactly like the original it is very close and is loved by all the family.

I keep a batch of this seasoning in the pantry for times when I can’t decide what to do with the chicken I have or I want something quick and easy that I can chuck in the oven. It’s great served with some homemade chips and a side salad, or equally as nice with some steamed veg on the side.

My family like it using chicken thigh but you can use chicken breast fillets as well. I coat the chicken with the seasoning, dip in beaten egg and then another coat of the seasoning. Place on one our baking mats and place in oven for around 20-30 mins until cooked. There is no need to spray or coat with oil. You could cook in a air fryer instead. I

The recipe makes a large batch, enough for 3-4 meals, and lasts in the pantry for months.

Do you still have Christmas ham that needs using up (or any protein/vegetables)?

I followed the recipe as written but you could sub any cooked protein and any vegetables that you have and it would still be delicious. Leftover bbq chicken or Christmas turkey would be great too.

It does take around an hour but most of that is the Thermomix® working for you so you’re free to do other stuff.

Fried Rice

Change of plans for dinner tonight and ended up cooking the Fried Rice from her THM Dinners cookbook.

This recipe makes heaps. I could barely fit it all in the thermoserver. It fed my family of 4 and I have enough leftover for lunches for the next few days.

It utilises the Varoma® and uses all the levels in the Thermomix®. Layering with the Thermomix® is great for not only cooking all in one dishes, but for bulking out a meal with extra veg or protein.

Dips

Dips are so easy to make in the Thermomix®. They make heaps and cost very little, so a great money saver. For less than $5 I can make 2-3 times the amount that I would get for that price at the supermarket.

The main reason I like to make my dips though is knowing exactly what’s in them. Have you ever looked at exactly what’s in the dips you are buying?

Plus I can whip one up in just seconds and usually have all the ingredients in my pantry/fridge. Great for this time of the year when you need to take a plate and the shops are a nightmare.

Skinnymixers Raw Spiced Rum Balls🤤

I finally found time to finish this recipe that I started 2 days ago. I had great intentions but then life got busy🤦‍♀️

It starts with soaking the dates and sultanas in a spiced rum for an hour and I figured 48 hours soaking couldn’t do any harm.

The actual hands on time is less than 10 mins as you throw all the ingredients in the Thermomix® and mix together for 15 secs. The recipe says to scrape down the sides of bowl and mix again for another 15 secs but I inadvertently mixed the first time for 20 secs and that’s all it needed. You then roll into balls and cover in coconut. I love a quick easy recipe.

Apparently it’s best to refrigerate at least overnight before eating as the flavour really develops. Mmmm I think that’s going to be a tough one😎

You can substitute the rum for extra orange juice or another alcohol. The recipe recommends using Kraken (or a vanilla based rum) but I only had salted caramel rum so used that and they still taste great.

These are so moreish and would make a great Christmas gift or plate to take to a Christmas party

Tonight’s dinner - Chicken rice paper rolls.

I don’t follow a recipe, but do use the Thermomix® to help with the prep. There are a few recipes on Cookidoo® if you need one.

The chicken is cooked and shredded in the Thermomix® and the vermicelli noodles are cooked in the thermoserver. I also use the Thermomix® to mix the sauce ingredients together to get a nice smooth consistency in a few seconds.
