We were honoured to host .koji.2022 at Red Funnel yesterday to do a demonstration cutting a 64kg Big Eye Tuna for Apprentices from Hamilton TAFE, and .
Chef Koji put on a fantastic masterclass showing how to not only fillet a whole tuna but how to break it down into various different cuts and how to utilise all parts of the fish reducing any wastage.
