Today marked the final auction at the current Sydney Fish Markets Site

Sydney Fish Markets has been the source of Majority of our fresh seafood and after many memories and a lot of early morning coffees over the years , we attended for the final auction this morning.

We were honoured to host .koji.2022 at Red Funnel yesterday to do a demonstration cutting a 64kg Big Eye Tuna for Apprentices from Hamilton TAFE, and .

Chef Koji put on a fantastic masterclass showing how to not only fillet a whole tuna but how to break it down into various different cuts and how to utilise all parts of the fish reducing any wastage.

A huge thank you to Chef Koji and the team from for helping with a such a fantastic experience for local aspiring chefs
