One of the first things I do when I'm wanting to make sure my family is well supported during a health crisis, is to make chicken stock. Including stock in your meals is very nutritious, immune supporting and yummy!
There's quite a few different stocks you can make: vegetable, chicken, fish, beef etc.
It's as simple as popping the vegetables etc into water and simmering it for a few hours. Such an easy and economic way to add nutrition to your meals. I generally use carrot, onion, celery, chicken bones, frames and/pieces, peppercorns, bay leaves, thyme and sage. I also add apple cider vinegar to help get all the goodies out of the bones. It's important to slowly simmer, not boil the stock. You'll end up with a bitter tasting stock if you boil it too rapidly. Enjoy :)

Now, more than ever, we need to take care of our bodies. Remember the simple things we can do. Getting some fresh air, sunshine and exercise will help support your body during this stressful time.
What are you doing for some exercise and fresh air today? I'm going for a walk down the beach.

Take 4, slow, deep breaths through your nose. Let's all slow down. If you can get outside in the sun and put your feet on the earth and do this, even better!

Here’s some information from Coeliac Australia about the Coronavirus and how it affects Coeliacs.

CORONAVIRUS (COVID-19) - Coeliac Australia has received a number of enquiries from members about COVID-19 and coeliac disease.
The advice from our Medical Advisory Committee is that presently, there is no evidence that coeliac disease imparts a higher risk of serious illness to COVID-19, but there will be people with coeliac disease who do fall within categories of higher risk for serious infection (e.g. aged over 60). It is important to always manage your coeliac disease optimally by following a strict gluten free diet and being monitored by your healthcare team (for more on this, see the overview provided on Coeliac Australia’s Monitoring & Follow Up Fact Sheet: bit.ly/FollowUpFacts). Practising good hand and sneeze/cough hygiene is the best defence against most viruses - more information on recommended COVID-19 precautions at the Department of Health website: bit.ly/3b0es4b. MEMBERS, further COVID-19 information from our Medical Advisory Committee is now available for you in the Member Area of our website https://www.coeliac.org.au/member-login
