A lunchbox this week!!

Not surprised at the egg yolk being left, I’ll guess that! Also knew Livvy wouldn’t eat her coconut date. Pretty much everything else is standard although Livvy usually likes some veg.

As always, in my lunchboxes and snack pot for morning tea.

Lunchbox of the day ft’ our bento 5 box! The best of the best for everyday lunchboxes IMO

I predicted she’d eat:
- bar
- cucumber
- goji berries
- yoghurt
- chickpea slice

I thought she would not have
- corn cob
- pasta
- capsicum
- sunflower seeds

Was very pleasantly surprised by the corn!! 🌽

Ingredients 🥬
1 cup couscous
1 block halloumi
1 roasted sweet potato
2 roasted zucchini’s
1 fried red onion
1/4 cup toasted pumpkin seeds

Dressing:
2 tbsp EVO

You can make friends with salad 🥗

Hosted a dinner and made 2 of the easiest salads, with minimal ingredients but still looked fancy!

First was a tomato, bocconcini & basil salad dressed in EVO & balsamic glaze.

Second was a cos, cucumber, avo & toasted pepita salad dressed in EVO, vinegar & Dijon mustard.
