Breakfast/lunch/dinner!! You choose. Here are some healthy nutritious recipes to begin the New Year with!!

Power Packed Peanut Butter topping!

Today was my first day on my 30day sugar detox (no extra sugars for January just to kick the sugar addiction in the but!) so I topped my protein pancakes with this homemade sauce to give it some extra goodness!!

2 tablespoons of cottage cheese
1 tablespoon of natural peanut butter
2 tablespoons of coconut milk

Mix all ingredients together thoroughly in a small bowl and use as a topping or a dip :)

Coconut Cocoa Spinach Quinoa porridge (adapted from Sarah Wilson's I quit sugar recipes)

1/2 cup cooked quinoa
1 teaspoon coconut oil
1 cup of spinach chopped
1 tablespoon of vanilla protein
1 tablespoon of raw cocoa
1/2 cup coconut milk
Nuts and shredded coconut for topping

Place quinoa and coconut milk into the pot. Bring to the boil.
Add coconut oil. Once melted mix in cocoa and protein powder.
Once it starts to thicken add spinach and stir until spinach is mixed in thoroughly.
Top with low GI fruit, nuts and shredded coconut :)

Enjoy!!

Dessert for breakfast?! Yes please!!! If you are bored of your usual breakfast try this for a treat!!

Coconut Cranberry and Blueberry Pudding

1 cup cranberries
1 cup blueberries
1 cup shredded coconut
1 400ml can of coconut cream or milk
1/2 teaspoon cinnamon
1/2 teaspoon of nutmeg
1 cup of quinoa
Honey to sweeten (optional)

Pour coconut cream, honey, cinnamon and nutmeg into a pot stir and wait until it starts to boil.
Add quinoa and stir often until cooked. About 20minutes.
Remove from the pot and place in a bowl.
Mix in the coconut, blueberries and cranberries.
Serve warm or cold!

Great as a dessert or for breakfast whatever you desire.
Serve with banana nut icecream. (Blend one frozen banana, 100ml of coconut cream, and 1 tablespoon of nut butter in the blender. Add ice to get creamy effect as desired).

DO YOU LOVE PIZZA LIKE I DO????

Don't stress, I have the perfect recipe for you!!! But wait theres more it's super easy too because why make life difficult?

Ingredients
2 eggs
1/4 Teaspoon of Baking Soda
2 Cups of Almond Meal
1 clove of garlic mashed
Herbs and spices of choice (I used basil, my favourite)

Method

Preheat oven to 180 Degrees

Mix all ingredients in a bowl. Once mixed roll out and form a round pizza base.

Cook for 10 Minutes (until half cooked)

Add toppings of choice ( I made an avocado and ricotta dip for the base with spinach and salmon).

Cook for a further 5-7 Mins

Enjoy!!!

I LOVE MUESLI!!!

I love good muesli but it is always so high in sugar and gluten!! Here is an awesome easy sugar free, preservative free and gluten free recipe for that treat breakfast once a week!!! (Because you will usually be having an isalean shake or meat and veg of course) :)

Toasted Quinoa Muesli

2 cups of quinoa flakes
1 cup of shredded coconut
1 cup of raw mixed nuts
2 teaspoons of cinnamon
2 tablespoons of coconut oil
1/4 cup chia seeds
2 tablespoons of honey (optional)

Preheat the oven to 180 degrees
Place all ingredients in a mixing bowl. Mix together until combined then lay out on a baking tray.
Bake for 30 mins or until golden and lightly crispy.

Enjoy mixed into an isapro or isalean shake or with coconut or almond milk topped with fruit!
