This recipe is a great option for a light lunch or healthy appetiser. Inspired by the Italian classic, Caprese salad, it’s definitely a crowd pleaser.

Mozzarella & Tomato Salad with Basil Essential Oil

Ingredients:
200 grams of cherry tomatoes
2 balls of good-quality mozzarella cheese
1 handful of fresh basil leaves
3 tablespoons of extra virgin olive oil
2 tablespoons balsamic vinegar
1 drop of Basil essential oil
Sea salt
Freshly ground black pepper

Instructions:
1. Wash the tomatoes, cut them in halves and put them in a bowl
2. Tear the mozzarella balls into chunks and mix with the tomatoes
3. Chop the basil leaves and add to the bowl with the tomatoes and mozzarella
4. In a separate container such as a jar or small bowl, mix balsamic vinegar, olive oil and Basil essential oil
5. When serving, pour the oil and vinegar over the salad and season with salt and pepper
6. Toss everything for the flavours to blend and serve
