Good food, great company, and plenty of laughs around the table!
A delicious 3-course meal, a few laughs, and plenty of little cooking tips along the way, just like sitting around the table with family.

Join me on Thursday, 26th March for our next Lunch with Louise! I'll be preparing a delicious 3-course meal from scratch, seasoned with plenty of love, laughter, and a few of my best kitchen tips. It's a wonderful chance to connect, share our journeys, and enjoy some old-fashioned country cooking together.

Happy International Women’s Day 💐

To all the wonderful women out there, strong, kind, resilient, and full of heart. Today we celebrate you.

Cheesy Guacamole Tortillas

​A crispy, cheesy vessel for fresh homemade guacamole.

Ingredients:

For the Guacamole:
1 ripe avocado
1 small tomato, diced
2 Tbsp red onion, finely diced
1–2 scallions, finely sliced
1–2 tsp fresh lemon juice (to taste)
Salt and pepper, to taste

For the Tortillas:

1–2 flour tortillas
½–1 cup shredded cheese (cheddar, mozzarella, or your favourite blend)

Instructions:

1. Make the Guacamole
▪️In a bowl, mash the avocado until mostly smooth.
▪️Add diced tomato, red onion, scallions, lemon juice, salt, and pepper.
▪️Mix well until combined.
▪️Set aside.

2. Cook the Tortilla
▪️Place a tortilla flat on a pan over medium heat.
▪️Sprinkle cheese evenly over one half of the tortilla.
▪️Fold the tortilla in half.
▪️Cook until the cheese melts and the outside becomes golden and crispy, about 2–3 minutes per side.

3. Assemble
▪️Carefully open the tortilla.
▪️Spoon the fresh guacamole over the melted cheese.

4. Serve & Enjoy
▪️Serve warm and enjoy immediately while crispy and cheesy.

Pro Tip: If you like a bit of heat, add a pinch of chili flakes or some diced jalapeño to the guacamole before mixing!
