|| Granola Time 🥥🥣🌰
Nutritious ● Delicious

With the rain over the last couple of days, I felt inspired to get into the kitchen and try out a new granola recipe by Gimme Some Oven – this healthy granola includes Tahini and tastes amazing 🙏

🔸️Beautiful for breakfast with berries and coconut milk or as a healthy snack.

🔸️The official recipe is available online at Gimmesomeoven’s website with detailed instructions, here is my version:

I n g r e d i e n t s

3 cups of oats

1 cup nuts – I used macadamias, hazelnuts & added extra slivered almonds

1/2 cup tahini

1/2 cup maple syrup

3 tbsp melted coconut oil

2 tsp vanilla extract

3/4 tsp salt

1 tsp ground cinnamon

1/3 cup coconut - shredded & flakes

D i r e c t i o n s

Combine oats & nuts in a large bowl

Combine all other ingredients in a pan, gently heat until the mixture is smooth

Combine the Tahini mix with the oats & nuts

Spread the granola on a baking tray

Bake at ~ 160 degrees for 15 min, stir it, bake for another 10-15 min

Add the coconut on top, bake for another 5 min or so (watch it so it doesn’t get too dark)

Let the granola cool and then break it up into the desired pieces.

🔸️Tahini is an excellent source of calcium, especially unhulled versions
🔸️Contains a range of other minerals including zinc & iron - its high copper content helps iron absorption
🔸️Rich in healthy fats and antioxidants
🔸️Good source of plant-based protein

|| Why is my life so hectic🤷‍♀️?

👉 A few clients asked me as they walked into my clinic this week and sat down to debrief

👉 While I didn't necessarily have a straight answer, we developed tailored supportive strategies and seeing them walk out feeling calmer and relaxed was rewarding 🙏

🔸️Do you feel stressed, rushed and have a sense you are not getting anywhere?

🔸️Do you and your nervous system feel overwhelmed by the pressure(s) of life?

👉 What if ... we focused on going at a slower pace, reducing the pressure or expectation on ourselves and hopefully, get things done with more ease?

👉 Instead of running a hectic rat race, let’s go at a more intentiona,l perhaps snail-like, pace 🐌

Since returning from my trip in August, I have been attempting to slow myself and my life down. Admittedly it feels futile on some days, however, consistent awareness and connection helps me when I get caught up in the busy pace of life ✨️

|| Back on the mat at Flynns Beach 🧘

I haven't attended a yoga class in a few years and I can’t think of a better location to start again – with these amazing views, the sound of the ocean in the background and the ocean breeze floating in 🌊 🏖 🌬

So special to be in a group of like-minded people and be guided by Denis Random Acts of Yoga with Denis 🧡 through this beautiful hatha class to connect with the breath, movement, stillness & Self. I left feeling centred, connected & inspired 🙏

It made me realise how much I missed it and how much value there is to do yoga within a group setting; alas, I promised myself to venture out more and attend classes (instead of practicing solo at home)✨️

Feel like baking this weekend 👩‍🍳? Try this plant-based recipe 🍋🫒 Its a treat ✨️

My taste buds were spoilt with my mum’s outstanding baking (and cooking) so a few days after I got back from Germany, I was craving …cake!

With plenty of fresh lemons 🍋🍋 at hand from our trees in the garden, I searched for a recipe and found this Lemon Vegan Olive Oil Cake Rainbow Nourishments 🙏

It’s a winner 💛

👉 I used (mostly) organic ingredients and 50% less sugar

👉 You can find the original recipe & topping options online at Rainbow Nourishments’ website - here is my version:

I n g r e d i e n t s

2 ½ cups of plain flour

½ cup of sugar

3 tsp of baking powder

Pinch of salt

1 cup of coconut milk

½ cup of extra virgin olive oil

1/3 cup of lemon juice

2 tbsp lemon zest

1 tsp of vanilla extract

D i r e c t i o n s

Mix all the dry & wet ingredients separately, then combine the two – don’t overwork the batter

Add to a loaf pan lined with baking paper

Bake at 180C for up to 1 hour – mine was done in less time

N o t e

I made a topping by combining lemon juice with a little bit of granulated sugar & spread the syrup over the top of the cake when it was nearly finished baking – I put it back in the oven for 5 minutes which resulted in a nice crusty tangy topping 👌

👉 Such a tangy moist cake, perfect with a cup of tea 🍵
