Almond White Chocolate and Craisins Christmas Cookies anyone?

This is the cookie that when baking will make your house smell like Christmas, and they taste amazing too🙌🏼💛

Recipe Makes: 12 Cookies
🎄
Cookie Ingredients:
🎄
2 Cups of Almond Meal
3 Tablespoons Maple Syrup
4 Tablespoons of Extra Virgin Olive Oil from Cobram Estate
1 Teaspoon of Vanilla
1/4 Cup of Sugar-free White Chocolate Chips from Noshu
1/4 Cup of Ocean Spray Craisins
1 Teaspoon of Cinnamon

Icing Ingredients:
🎄
1 Cup of Lakanto Monkfruit Icing Powder
1/2 Cup of Thickened Cream - for a Vegan / Dairy Free Option use Coconut Cream
1 Teaspoon of Vanilla
🎄
Decorate using Craisins, Fresh Mint Leaves, and for an Extra Festive Twist, Dust the Cookies with Lakanto Monkfruit Icing Powder

Method:

Preheat your Oven to 170 degree's celsius - fan forced
Combine all your ingredients in a Mixing bowl.
Roll into balls, then place on a baking tray that has been lined with baking paper.
Keep a good gap between each cookie, as they will expand when baking.
Place into the Oven to Bake for 15 minutes or until golden.
Allow them to Cool Completely on the Tray, before moving them to avoid them breaking.

In a separate bowl, combine all your icing ingredients with a fork.
once you reach your desired consistency, spoon them on top of your cookies, drizzle craisin on top, and add mint leaves.

Lastly, dusk them with some more Monkfruit Icing Powder and ENJOY!!✌🏽

Blueberry & Lychee Cocktails 🍸

Happy Hour over here 📍

These super delicious cocktails are something special, and over summer going to be on repeat at my house 🙌🏼

Ingredients;
* 1 Cup of Low in Sugar Blueberry juice🫐
* 60ml Paraiso Lychee Liqueur

Grilled Lemon Broccolini & Garlic Butter Mushrooms with Tzatziki and Dukkah

Sometimes we over complicate our meals…. Yes even I do it sometime.
But sometimes the most mouth watering/ tasty meals are fairly simple flavours that celebrate the vegetables.

Preparation Time: 5min
Cook Time: 5 min
Serves: 2 People or 4 Tapa’s Style

Ingredients:

1 Bunch of Broccolini
Handful of Swiss Brown Mushrooms
Garlic Butter (chopped garlic, butter and parsley)
Tiny Toms
Juice of half a Lemon
Pistachio Dukkah
EVOO
Tzatziki -(Greek coconut yoghurt /garlic/lemon/pepper/grated cucumber/parsley combined in a food processor)

Method:
Grill your Broccolini & Sliced mushrooms in a pan in EVOO, and garlic butter.
Then squeeze half a lemon over them one they have some colour on them.
This step will create steam so wait until the last minute or so to do it.

Then plate up, add some fresh tiny tomatoes in the gaps for bursts of sweetness, too with Tzatziki, Extra Virgin Olive Oil, and Pistachio Dukkah.

Cranberry Pure & Macadamia Winter Oats

Just what these freezing 🥶 winter mornings need!
This bowl of deliciousness will hit the spot on a winters morning.

Preparation Time: 3 min
Cooking Time: 3min
Serves: 2 people

Ingredients:
2 Cups of Protein Creamy Oats
1 Cup of Your Favourite Plant Based Mylk
1 Cup of 1L Unsweetened 100% Pure Cranberry Juice
2 Tablespoons of Pure Maple Syrup🍁
1/2 Cup of Macadamia Nut Butter

Method:
Combine all ingredients into a microwaveable bowl, and microwave on high for 3 minutes.
Stop every minute, and stir before popping it again into the microwave again.
This could also be done in a pot on the stove if desired, just cook until your desired consistency.

Garnish:
You can add any of your favourite topping’s
I added, some 50% Less Sugar Craisins, chopped macadamias, rose petals and fresh blueberry and banana, vegan caramel.

West Gold Butter makes everything better 🧈

This delicious, high-quality West Coast, New Zealand salted butter is crafted from milk from healthy cows on lush pasture. With a rich taste, Westgold salted butter works seamlessly with any recipe or simply atop your favourite vegetables, in a steak sauce or dripping off hot toast, whilst Westgold unsalted butter is a versatile product, partnering beautifully with home baking, providing the buttery flavour and texture you love.

I love grilling vegetables in butter, it adds such flavour to the vegetables as they grill. I do this with Dutch Carrots, broccolini, asparagus and green beans.

This is the simple ingredients you will need;
Your vegetable of choice
2 tablespoons of EVOO
Juice of half a lemon
Salt and Pepper
Cubes of

Method:
Heat up your pan, put in your EVOO and then throw all your vegetables into the pan. Swirl around on low heat, add salt and pepper, turn heat up and add the lemon juice on top and let it sizzle in the pan, then throw in a few cubes of 🧈 butter.

Tips;
Just remember you don’t want chunky vegetables in there cause they take longer to cook, and whilst burnt butter is delicious, you don’t want it to char and ruin everything.
You don’t want the vegetables to take long to cook 👩🏽‍🍳
