Great tips below from Dr Rupa at Doctors Kitchen on what to look for when buying chocolate.

WHEN BUYING CHOCOLATE LOOK FOR
85% cocoa or higher – The closer it is to the original cacao bean, the better. That usually means higher in cocoa flavanols, lower in sugar, and less processed.
Minimal ingredients – No unnecessary additives like soy or sunflower lecithin, vegetable oils, cocoa butter equivalents, or artificial flavourings or sweeteners. Good chocolate really doesn’t need much.
Traceability – Many bars now list the origin of their cocoa beans, which is a great sign that they’re proud of their sourcing and quality.
Lab tested (bonus) – I’m seeing more brands share results from third-party testing for flavanol content and heavy metals, which is awesome.
For cacao powder – Unsweetened and non-alkalised (not Dutch processed), as alkalisation can reduce flavanol content.
