Zoodles who? These sweet potato glass noodles tossed in green goddess vibes, kale, coriander, broc & avo are your new go-to glow bowl.
Recipe (Serves 1):
Ingredients:
1 small handful broccoli florets
1 cup sweet potato glass noodles
1/2 cup kale, roughly chopped
1/2 avocado
2 tbsp raw cashews (soaked 10-15 mins if possible)
Juice of 1/2 lemon
1 garlic clove
1 small handful fresh coriander
Pinch salt + pepper
1 tsp olive oil (optional, for air-fryer)
Instructions:
Broccoli: Toss florets with a tiny drizzle of olive oil, salt & pepper. Air fry at 180°C for 8-10 mins until lightly crisp.
Noodles: Cook sweet potato glass noodles according to packet instructions, drain, set aside.
Sauce: In a blender, combine cashews, lemon juice, garlic, coriander, avocado, pinch of salt, and a splash of water until creamy. Adjust consistency.
Greens: Lightly sauté kale or toss it raw if you prefer crunch.
Assemble: Mix noodles, kale, and broccoli. Pour over green goddess sauce. Toss well, garnish with extra coriander if desired.
