Yesterday, I spent half the day cooking and using up everything I could find and making some delicious meals.

As someone who eats plants mostly, tomato based meals are my go to, especially in Winter. Tomato based pasta sauces and chilli bowls are my favourite. Never repetitive when you can add different flavours with herbs and spices.

It’s a waste not to make double batches to have an extra in the freezer.

I love mushrooms and love my mushroom bolognaise sauce, adding oregano for a different flavour. Even mixing up the type of mushroom you cook with changes it !

This chilli bowl definately delivered 🌶 wasn’t a dry eye in the house but tasted so good.

I am having so much trouble giving up my smoothies on these cold mornings. Normally I’ve switched back to warm porridge by winter.

This is how I make the easiest, colourful, delicious and healthy fried rice for lunches, or dinner.

I call it healthy as it is packed full of fresh plants - I used 12 different plants in this wok 🌱

✅ dice all the veggies and fry them up
✅ add the rice
✅ add some sauce soy and hot sauce to taste
✅ I added marinated organic tofu

My tip - precook the rice and ensure it is cool. Day before even better. I use brown rice normally but basmati today.

I marinated the tofu in soy and garlic overnight then fried off prior to added to the rice. I used a splash of sesame oil.

I can only keep kicking goals when I meal prep for the week ahead. It works for me due to my work commitments. I love the positive start to my week just knowing I have meals covered and a fridge equipped for ‘Mum, I’m hungry, what is there to eat’ !

If you feel you struggle to keep up with healthy meals, I highly recommend spending sometime prepping.

Make it easy, if that is what you need….

✅ quinoa or rice cooked
✅ basic pasta sauces to freeze
✅ make larger batches to have more meals in freezer
✅ roast a tray of vegetables
✅ leftover vegetables diced up ready to throw into the slow cooker for a soup or stew
✅ lightly toasted some nuts to add to salads

The above can be less than an hour to prepare.

👍A healthy fried rice can take just minutes to get on the stove if the rice has been precooked.

👍Roast vegetables are so easy to add to a nourish bowl with quinoa.

👍 home from work late.. and what a relief that pasta sauce is ready to go !

👍Salads are great with some toasted nuts added on top.

We make our healthiest decisions when we are not time poor and hungry.

When your planning your meals, do you put some thought into what goodness the plate will bring ?

It isn’t as hard as it may feel. Keep it simple. Keep it fresh.

🌱Have I eaten fruit today?
🌱Do my meals consist of salad or vegetables?
🌱Have I added enough protein (plant or animal)?
🌱 Good carbs ?

Keep it easy if you don’t like cooking, and add flavour with herbs and spices.

My ”go to” lunch. Tofu, roughly chopped vegetables (7 in this one), some chilli and coriander to top. 5 minutes prep and 8 minutes to cook. About 2 minutes to eat today 😂

I eat a large late lunch on the days I have classes at night, so don’t judge me on the size 😆

I cannot survive the week as a business owner and Mum without meal prepping on the weekends. Pulling out a favourite pasta dish (special request by my daughter) for lunches for the next few days.

Who else meal preps ? What’s your tips ? I have a few staples always on hand like pasta sauces, Mexican chilli, a curry in cooler months.

I find winter easier as my slow cooking can be on all day.

This week one of my lovely clients / friends gave me a pumpkin from their garden. Team it up with homemade vegetable stock from another friend and it’s rissotto night. Something feels so good about using fresh produce to cook your meals.

I’ve been making my bolognaise sauce with sautéed mushrooms and home grown cherry tomatoes. Topped with basil. Great idea if you are looking for a meat free dinner, packed with flavour.

It kills me to waste food yet I seem to always cook way too much for my family 😳

Mexican rice ✔️

Great way to use up the leftover rice, vegetables, tomatoes, beans and the herbs on their last legs 🌱

And so healthy.

I like to add smoked paprika, coriander, cumin and chillli to my Mexican dishes. I’m looking forward to lunch tomorrow already 😊

Back to work today and productive inbetween clients.

School lunchbox cooking underway. Went slightly overboard with the peanut butter balls ! I freeze all these goodies in portions ready for the kids when school goes back.

On the lookout for new recipes for lunchbox snacks. Healthy and preferably vegan. If you have any, I would love to hear about it xx
