Peanut Butter & Honey Rice Crispy Treats 🥜🍯
This has quickly become one of my most loved treats from students this year. A lot asking for the recipe and recreating it at home, some even calling it ‘Jolan Slice’ which is the nicest compliment ever 😍 but as I lovingly say each time someone asks for the recipe - I cannot take credit at all! This is the brilliant work of and I really encourage everyone to check out their work and books.
Recipe (how I make it):
2 cups gluten free Rice puffs
1 cup peanut butter
1/2 cup salted butter
1/2 cup honey
Pinch sea salt
Gojis berries measured with the heart
Method:
Melt the PB, butter and honey in a pot & stir until combined
Mix the puffed rice & salt in a large bowel
Add the melted mix ingredients into the dry ingredients until all combined
Add goji berries (or any extras you like)
Transfer to a square pan & chill in fridge until ready to eat, cutting into squares whilst hard (this softens quickly so must be kept in the fridge as much as possible)
These also freeze well and make excellent gifts for the wonderful people in your life 🫶🏼
