SANTA-APPROVED CHOC CHIP COOKIES //

If you’re leaving cookies out for Santa this Christmas, remember:

🎅🏻 He’s doing a LOT of steps
🎅🏻 He’s up all night
🎅🏻 He’d probably really appreciate a homemade cookie that won’t put him into a complete sugar coma.

When you’re delivering joy all night long, the right kind of cookie matters.

With that in mind, let’s get baking 🍪

- 1 cup almond meal
- 3/4 cup plain flour/GF plain flour
- 1/4 cup maple syrup or honey
- 1/3 cup melted coconut oil
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 cup dark chocolate chips/diced choc-block

- Preheat the oven to 170 degrees, then mix all the ingredients in one bowl until combined.
- Roll into balls (dough should feel soft, slightly sticky and able to roll without cracking. Add 1-2 tbsp of oat milk if needed), place on lined tray and gently flatten.
- Bake for 10-12 mins or until golden.
- Cool (or don’t…..Santa won’t judge 🤭)

A cara-clinic is a fully restored, renovated and 1-of-a-kind, 11ft vintage caravan that has been transformed into a mobile clinic.

My food and health philosophy – eat for health and eat for happiness. Choose real foods rich in protein, carbohydrates, fats, antioxidants, and phytonutrients. Enjoy a variety of fresh and seasonal fruits, vegetables, nuts, seeds, plant and animal proteins as well as healthy fats. Enjoy the feeling of satiety (feeling nourished and satisfied), appreciate the delicious tastes and take pleasure in making educated decisions about your health.
