উচ্চমাত্রার ইউরিক অ্যাসিডের কারণে গেঁটে বাত বা গিরায় গিরায় ব্যথা, উচ্চ রক্তচাপ, কিডনি অকেজো হওয়ার মতো সমস্যা দেখা দিতে পারে। আমাদের প্রতিদিনের খাবারের মধ্যে কিছু আছে যেগুলোতে ইউরিক অ্যাসিডের পরিমাণ বেশি। আবার কিছু পুষ্টিকর খাবার আছে যেগুলো ইউরিক অ্যাসিড নিয়ন্ত্রণে ওষুধের মত কাজ করে।

বেশি পরিমাণে প্রোটিন বা আমিষ খেলে অথবা অ্যালকোহল জাতীয় খাবার বেশি খেলে দেহে পিউরিন নামক নন এসেনসিয়াল এমাইনো এসিড তৈরি হয়। এই পিউরিন থেকেই ইউরিক এসিড তৈরি হয়। এই ইউরিক এসিড প্রথমে রক্তে চলে যায়। সেখান থেকে কিডনির মাধ্যমে প্রস্রাবের সঙ্গে দেহ থেকে বের হয়ে যায়। রক্তে যদি ইউরিক এসিডের মাত্রা স্বাভাবিকের চেয়ে বৃদ্ধি পায় এই অবস্থাকে বলা হয় হাইপারইউরিসেমিয়া।

স্বাভাবিক অবস্থায় নারীদের ক্ষেত্রে রক্তে ইউরিক এসিডের মাত্রা হলো ২.৪ থেকে ৬.০ মিলিগ্রাম পার ডিএল এবং পুরুষের ক্ষেত্রে ৩.৪ থেকে ৭.০ মিলিগ্রাম পার ডিএল।

জেনে নেওয়া যাক ইউরিক এসিড বৃদ্ধিতে কোন ধরনের খাবার খাবেন এবং কোনগুলো খাবেন না:

যেসব খাবার পরিহার করতে হবে

- অর্গান মিট অর্থাৎ অঙ্গ-প্রত্যঙ্গ জাতীয় মাংস যেমন- কলিজা, মগজ, জিহ্বা, ফুসফুস, কিডনি ইত্যাদি খাওয়া যাবে না। কারণ এগুলো ইউরিক এসিড বাড়ায়।

- অধিক চর্বিযুক্ত গরুর মাংস, খাসির মাংস, ভেড়ার মাংস বা মহিষের মাংস খাওয়া যাবে না। কারণ এসব খাবারে ইউরিক এসিডের মাত্রা অধিক। এসব মাংস যদি খেতে চান তাহলে একেবারে চর্বি ছাড়া মাংস অল্প করে খাবেন।

- সামুদ্রিক মাছ এবং শক্ত খোসাযুক্ত প্রাণী যেমন- চিংড়ি, শামুক, কাঁকড়া ইত্যাদি খাবার এড়িয়ে চলুন।

- সব রকমের ডাল, মটরশুটি, সিমের বিচি, কাঁঠালের বিচি ইত্যাদি খাওয়া পরিহার করতে হবে।
-
- মধু, চিনির সিরাপ, চিনিযুক্ত পানীয়, বিশেষ করে প্রক্রিয়াজাত ফলের জুস, কোমল পানীয় একেবারেই খাওয়া যাবেনা।

- কিছু কিছু শাকসবজি যেমন- পালংশাক, পুঁইশাক, ব্রকোলি, ফুলকপি এড়িয়ে চলুন। এছাড়া মাশরুমও খাওয়া যাবে না।

- চিনিযুক্ত পানীয়, অ্যালকোহোল এবং ক্যাফেন জাতীয় পানীয় খাওয়া যাবে না।

যেসব খাবার বেশি বেশি খাবেন

- অধিক আঁশযুক্ত খাবার যেমন- সবুজ শাকসবজি এবং ফলমূল। এই আঁশযুক্ত খাবার শরীর থেকে ইউরিক এসিড মল আকারে বের করে দেয়।

- চর্বিহীন মাংস খেতে হবে। এ ক্ষেত্রে মুরগির মাংস উত্তম। তবে চামড়া এবং পাখনা খাওয়া যাবে না। কারণ এতে প্রচুর চর্বি থাকে। তাছাড়া পরিমাণ মতো মাছ এবং কুসুম ছাড়া ডিম খাওয়া যাবে। ফ্যাট ছাড়া দুধ বা স্কিম মিল্কও খেতে পারবেন।

- বেশি বেশি টক ফল বা ভিটামিন-সি জাতীয় খাবার খেতে হবে। গ্রিন টি ইউরিক এসিড কমাতে সহায়তা করে। তাই ইউরিক এসিড কমাতে নিয়মিত গ্রিন টি পান করতে পারেন।

- চাহিদার তুলনায় বেশি পরিমাণ পানি পান করতে হবে। প্রতিদিন আড়াই থেকে তিন লিটার পানি পান করবেন। পানি দেহের যে কোনো ধরনের বিষকে দূর করতে সহায়তা করে। এ ক্ষেত্রে ইউরিক এসিড নিয়ন্ত্রণেও কার্যকর পানি।
