Warm red dhal — cozy, nourishing, and perfect for winter nights ✨🍲

Quick recipe (serves 3–4)
Ingredients
* 1 cup red (coral) lentils, rinsed
* 1 can (14 oz) chopped tomatoes (use canned in winter)
* 1 onion, chopped
* 3 garlic cloves, minced
* 1–2” ginger, grated
* 1–2 cups cooked spinach, chopped
* 2–3 tbsp coconut oil or ghee
* 1 tsp mustard seeds
* 1 tsp cumin seeds
* 1 tsp turmeric powder
* 1 tsp coriander powder
* ½–1 tsp chili powder
* 1 tsp garam masala (opt.)
* Salt, 3–4 cups water/broth, cilantro + lemon to finish
Instructions
1. Cook lentils + turmeric in 3 cups water/broth until soft (15–20 min).
2. Sauté mustard seeds → cumin → onion in oil until golden. Add garlic + ginger (1–2 min).
3. Add coriander + chili, then canned chopped tomatoes. Simmer 5–8 min.
4. Mix tomato-spice mix into lentils, simmer 5–10 min.
5. Stir in spinach at the very end, heat through.
6. Adjust salt/consistency, finish with garam masala, cilantro & lemon.
Serve with rice and oven-baked veggies for a full meal. Cozy up and enjoy! 🌿🔥
