🍠 Sweet potatoes coral lentil dhal and roasted veggies 🍆🥕
Ingredients:
* 1 cup coral lentils (red lentils)
* 1 medium sweet potato, diced
* 1 onion, finely chopped
* 2 tomatoes, chopped (or 1 cup canned)
* 2–3 garlic cloves, minced
* 1 tsp grated ginger
* 1 tsp cumin seeds
* 1/2 tsp turmeric
* 1 tsp ground coriander
* Chili flakes or fresh chili (to taste)
* Salt, pepper, oil
* Water or veggie broth
How to:
1. Rinse lentils well.
2. In a pot, sauté cumin seeds in a little oil. Add onion, garlic, and ginger, cook until soft.
3. Then add tomatoes and cook until saucy.
4. Add lentils, sweet potato, and water/broth to cover about 1cm above the preparation.
5. Stir in the spices
6. Simmer until soft
7. Season and mash slightly for that creamy texture.
🌿 Serve with rice or just a spoon. Cozy, simple, and full of flavor!
