🥕 Warm up with a Roasted Carrot & Ginger Soup:

1 lb carrots, peeled and chopped
1 onion, chopped
2 cloves garlic, minced
1-inch piece fresh ginger, grated
4 cups vegetable broth
Salt, pepper, and a pinch of nutmeg to taste

Toss carrots, onion, garlic, and ginger with a little olive oil, roast at 400°F for 25–30 minutes. Blend with broth until smooth. Season and serve warm.
