When my sons plate looks like this at the end of a meal AND he says “thank you for lunch mom” I know I have done a good job at combining nutrition and taste. It isn’t always easy but his parting words from the table help me keep trying.
This lentil, chickpea & spinach stew was perfect on a cold day following his outdoor ‘at home learning’ recess.

Spaghetti Carbonara ... one of my old favourites that I haven’t had since I stopped eating eggs, dairy and pork. Substituting butternut squash, fennel and garlic for the eggs and dairy and voilà it was delicious 😋 purée worked best for me and although I contemplated adding coconut milk, I didn’t chance it but if anyone tries adding it please let me know how it tastes.
Side note butternut squash has high antioxidant content that can decrease disease risk and can aid in weight loss while loading you up on vitamins and minerals

I scooped a recipe from The No Meat Athlete Cookbook for ‘One Pot Pasta’ super easy and hearty for a Fall evening and it was a hit with my 13 year old food critic so I recommend it !!!
