Starting your week with something nourishing doesn’t have to be complicated or expensive!

✨ This Week’s Easy Meal Idea: Veggie-Packed Quesadillas

How to make it:

1. Chop veggies and sauté in a large pan with 1 tbsp olive oil for 3–4 minutes until softened.

2. For each quesadilla: sprinkle ½ cup cheese and 1 cup cooked veggies on one tortilla, then top with another tortilla (or fold one tortilla in half for smaller portions).

3. Cook on a pan over medium heat until golden on both sides and the cheese is melted (about 2–3 minutes per side).

4. Slice each quesadilla into wedges and serve with salsa or Greek yogurt.

Happy Monday! This week we're featuring a warm and simple meal, perfect for the upcoming autumn season!

One-Pot Turkey & Lentil Stew - A quick, cozy, protein-rich meal that nourishes body and mind.

🍲 Instructions:

1. In a large pot, heat olive oil over medium heat. Sauté onion, garlic, and carrots until softened.

2. Add ground turkey, breaking it up and cooking until no longer pink.

3. Stir in lentils, diced tomatoes, broth, and spices.

4. Cover and simmer for 25–30 minutes until lentils are tender.

5. Taste and adjust seasonings. Serve warm with a slice of toast or by itself.

This meal is rich in nutrients that help regulate mood and lower stress. Turkey contains tryptophan, a precursor to serotonin, which supports emotional regulation and sleep. Happy Monday! We're excited to start this week off with a healthy and simple recipe from our 'Nourish to Flourish' series!

🍽 This Week’s Recipe: One-Pan Lemon Garlic Chicken & Veggie Skillet
A 25-minute, flavorful dinner with lean protein, vibrant veggies, and brain-boosting nutrients — all made in one pan for easy cleanup.

Cooking Instructions:

1. Heat 1 tbsp olive oil in a large skillet over medium-high heat.

2. Season 2 chicken breasts (sliced into strips) with salt, pepper, and ½ tsp paprika.

3. Sear chicken for 3–4 minutes on each side until golden and cooked through. Remove and set aside.

4. In the same pan, add 1 diced onion and 2 minced garlic cloves; sauté until fragrant (2 minutes).

5. Add 1 chopped zucchini, 1 chopped red bell pepper, and 1 cup cherry tomatoes. Cook for 5–6 minutes until softened.

6. Return chicken to the skillet, add juice of 1 lemon, 1 tsp dried oregano, and ¼ cup chicken broth. Stir and cook for another 3–4 minutes.
