My go-to coconut milk chia pudding is one of those things I make once and enjoy all week long—perfect for busy mom life, especially heading into spring and summer.
All you need:
• 3 cups coconut milk (1 carton)
• 3/4 cup chia seeds
• 3 tbsp maple syrup
• 2 tsp vanilla
Whisk everything together until smooth (no clumps), pop it in the fridge for at least 5 hours or overnight, then give it a good mix and portion into containers.

I love switching it up depending on what I’m craving that week:
• Homemade berry coulis + coconut shavings
• Homemade caramel + white chocolate chips
