As a nutritionist I prioritize whole foods over supplements whenever possible, and fermentation is the easiest and cheapest ways to make probiotic foods at home π₯
This rainbow carrot salad is currently fermenting on my counter, creating all those gut-healthy probiotics our digestive systems crave! Hereβs the recipe:
Rainbow carrot salad ππ₯
- 175g (6 medium) carrots
- 1 inch ginger
- 2 cups filtered water
- 15g non-iodized salt
Wash and peel the carrots into ribbons. Peel the ginger into small strips. Dissolve the salt into the water. Add the vegetables and salty water (brine) to a jar. Cover with a glass weight (pickle pebble) and airlock lid (pickle pipe), and store in a cool, dark place for 2-5 days. Cover and refrigerate after fermentation. Enjoy!
