🌿 A Nutritious Twist on a Classic: Cauliflower Mashed “Potatoes” 🥔✨

March is Nutrition Month, and what better way to celebrate than by making small, nutrient-rich swaps in your favorite dishes? This Cauliflower Mashed “Potatoes” with Garlic & Chives recipe is a light yet satisfying alternative to traditional mashed potatoes—without sacrificing flavor!

✅ Lower in carbs & calories
✅ Creamy & delicious—without the heavy ingredients!

🥣 Ingredients (4–5 servings): 1 large head of cauliflower, chopped into florets ¼ cup Greek yogurt (or cashew cream for dairy-free) 2 cloves garlic, minced ¼ cup fresh chives, chopped 1 tbsp olive oil or butter (optional, for extra creaminess) Sea salt & black pepper, to taste

👩‍🍳 Directions: 1. Cook the Cauliflower: Bring a large pot of water to a boil, add cauliflower, and cook until fork-tender (about 10–12 minutes). 2. Drain & Dry: Drain well, then return cauliflower to the pot on low heat for 1 minute to remove excess moisture. 3. Blend: Transfer to a food processor. Add Greek yogurt (or cashew cream), minced garlic, and olive oil/butter if using. Blend until smooth & creamy. 4. Season: Add sea salt & black pepper to taste. Blend again. 5. Garnish & Serve:

Transfer to a bowl, sprinkle with fresh chives, and enjoy warm!

Let’s talk about the unsung hero of nutrition—fiber! 🌿
