Turkey Bacon & Tomato Egg Bites πŸ₯“πŸ³πŸ…

I swear half of the recipes I come up with just come from me using whatever I have in my fridge. πŸ˜‚ these turned out really good though! & they’re super easy to make, low calorie & high protein.

Ingredients:
πŸ₯š 6 eggs
πŸ§€ 300g cottage cheese
πŸ… diced tomatoes / cherry tomatoes
πŸ₯“ 4 slices Turkey bacon - chopped
πŸ§‚ salt & pepper
πŸ§€ grated cheese

To make them:
πŸ₯“ chop the bacon and tomatoes, disperse evenly into greased muffin tin
πŸ₯š blend the eggs and cottage cheese until smooth, season with salt and pepper
πŸ… pour the egg mixture evenly in the muffin tins, over the bacon and tomato
πŸ§€ sprinkle with grated cheese

Bake at 350Β°F for 25-28 minutes, until cheese is crispy and egg bites are firm.

❀️ Per egg bite:
- 110 calories, 9g protein, 8g fat, 2g carb

Gluten Free Pecan Pie Cookies πŸ€©πŸ€ŽπŸ‚

These are literally SO YUMMY & naturally sweetened with only dates and maple syrup! 🀯 you can’t even tell that they are gluten free. The perfect sweet & healthy indulgence for the holidays. πŸ€­πŸŽ„

For the Cookies: πŸ‘‡πŸΌ
🀍 2 1/4 cup gluten free all purpose flour (or almond flour)
🀎 1/4 tsp salt
🀎 1/4 tsp baking soda
πŸ₯₯ 5 tbsp coconut oil
🍁 3 tbsp maple syrup
πŸ₯› 2 tbsp milk of choice
🍦 1 1/2 tsp vanilla
🌰 1/2 cup chopped pecans

For the filling: πŸ‘‡πŸΌ
🀎 1/3 cup chopped dates
🍁 5 tbsp maple syrup
πŸ₯₯ 1/4 cup coconut oil
πŸ₯› 1 tbsp milk of choice
🍦 1/4 tsp vanilla
🀍 1/8 tsp salt
🌰 1 cup chopped pecans

To make them: πŸ‘‡πŸΌ
πŸ‘©πŸΌβ€πŸ³ preheat oven to 350Β°F.
🀍 add flour salt and baking soda to a bowl, mix together. Add coconut oil and mix together until a crumbly dough forms.
🍁 stir in the maple syrup, vanilla & milk. (You may need to add in more milk if it’s too crumbly). Add only enough moisture for the dough to come together, it should still be crumbly.
🌰 fold in chopped pecans
πŸͺ roll into balls and place on a cookie sheet. Flatten the middle of the balls to make an indent for the filling. Set aside

Make the filling:πŸ‘‡πŸΌ
🀎 cover the chopped dates in 1 cup of warm water. Let sit for 5-10 minutes to soften. Strain.
πŸ₯₯ in a small pot on low heat, add the coconut oil, maple syrup, milk and vanilla. Stir until the coconut oil is just melted and then remove from heat.
🍦 add the liquid and the strained dates to a blender, blend until smooth. Fold in chopped pecans.

Add your filling to the indents on the cookies & bake in the oven for 12-14 minutes or until the bottoms of the cookies are golden brown.
