Lemon Strawberry Mint Water Kefir Recipe
Makes about 4 cups

🍓4 cups first ferment
🍋1/4 cup fresh squeezed lemon juice (or 2 drops food grade essential oil)
🍓1/4 cup chopped strawberries (fresh or frozen)
🍋5 sprigs fresh mint leaves

Add everything to a swivel top bottle with your first ferment water kefir. Seal the bottle and leave it somewhere warm for about 24 hours for the second ferment.

Strain, chill, and enjoy a refreshing probiotic!

Hydration, but make it fermented 🥥🍉🥒

Our Coconut Water Kefir Re-Hydration Soda is light, fizzy, and packed with electrolytes. It’s perfect for warm days, workouts, or anytime you need a refresh.

You’ll need:
➡️ 4 cups first ferment coconut water
➡️ 1/4 cup diced cucumber cubes
➡️ 1/2 cup watermelon
➡️ 2 tbsp lime juice
➡️ Pinch fine grain pink Himalayan salts
Optional: 1 teaspoon honey or agave syrup, or a sprig of mint

How it’s made:
- Make the first ferment coconut water and leave the jar in a warm place for 24-48 hours.
- Add all the ingredients to a clean and sanitized swivel top bottle.
- Strain the grains, and add the first ferment to the bottle. Seal the lid, and gently shake upside down to ensure all the ingredients are well mixed.
- Seal up the green swivel top bottle and leave it in a warm place for 24 hours for the second ferment.

Open slowly, strain and enjoy! 🫧

🌟Water Kefir Tip of the Week🌟

We recommend doing a second ferment even if you are unsure if fermentation worked during the first ferment, as it likely did! Often, the first ferment will be quite sweet, have little fermented taste and only a few slight bubbles.

For the second ferment, ensure you are using a swivel top bottle that seals tightly.

Keep in mind that the amount of fizz depends on sugar content, second ferments with less sugar will naturally be less bubbly. If you want a fizzy drink use a high sugar juice like pineapple or mango. 🫧

A recipe that will surely brighten your day 🌞

Raspberry Vanilla Water Kefir Soda

INGREDIENTS:
✨4 cups first ferment
✨10 – 20 raspberries (fresh or frozen)
✨1/2 tsp. vanilla extract

INSTRUCTIONS:
- Make the first ferment and leave the jar in a warm place for 24-48 hours.
- Strain the grains and add all ingredients to the swivel top bottle with the first ferment water kefir.
- Seal up the swivel top bottle and leave it in a warm place for 24 hours for the second ferment.
- Open slowly, strain and enjoy! 😊

This Orange Vanilla Water Kefir tastes like a creamsicle from your childhood, and full of vitamin C! 🍊🥂

Orange Vanilla Water Kefir Soda

INGREDIENTS
• 1/2 cup fresh squeezed orange juice
• 1 tsp pure vanilla extract (we love Mexican vanilla)
• 4 cups first ferment

INSTRUCTIONS
1. Make your first ferment and leave the jar in a warm place for 24–48 hours.
2. Add orange juice and vanilla to a clean, sanitized swivel top bottle.
3. Strain out the grains and fill the bottle with first ferment.
4. Seal and gently shake upside down a few times to mix.
5. Leave in a warm place for 24 hours for the second ferment.
6. Burp every 8 hours to prevent overflow.
7. Refrigerate until well chilled, then enjoy!

Did you know you can make salad dressing using water kefir from the first ferment? 🤔

Today we’re featuring an Orange Sesame Water Kefir Salad Dressing that pairs perfectly with an Asian-style salad.

Ingredients:
1/4 cup orange juice
3 tbsp olive oil
3 tbsp toasted sesame oil
3 tbsp soy sauce
2 tbsp first ferment vinegar (recipe on our website)
2 tbsp maple syrup or honey
1 clove garlic
1″ piece fresh ginger, peeled

Instructions:
Add all ingredients to a blender and blend until smooth. Enjoy!

Our Story

Water kefir has the potential to help anyone with gut problems caused by imbalance and the stresses of modern life. I believe it should be available and accessible to everyone. At Happy Gut, we are on a mission to make this happen.

Several years ago, my sister-in-law Ursula shared some water kefir grains with me. I was intrigued that she and her medical co-workers were making and drinking water kefir to boost their immunity. As a teacher, I thought that if this could work amongst hospital staff, it could also work in schools. With great enthusiasm I decided I needed to brew this for myself, my family and friends.

But, it just wasn’t that easy. I struggled to find all the right water kefir brewing supplies in my local region then started my first batch, but I had no idea what I was doing and I was overwhelmed. I didn’t want to be fermenting something harmful, so I did some research and found a lot of mixed information.

Through trial and error, I got better at making water kefir. My kefir grains multiplied profusely—it seemed I had struck the perfect combination of fresh, mineral rich water and mixed organic sugars to achieve an explosion of beautiful, plump, water kefir grains. I believed there were other people like me who wanted to make water kefir and would appreciate a simpler way to start.
