This Ancient Roman Cold Soup is both healing and delicious!
Some recipes make you stop in your tracks because they feel way too modern for how old they are. This one reaches back nearly 2,000 years to the kitchens of the Roman Empire, and it is basically an ancient cousin of gazpacho. It comes straight from De Re Coquinaria, one of the earliest surviving cookbooks in history, where it appears under the name Aliter Salacaccabia.
The Romans made this cold bread soup for the sick and the exhausted. They soaked bread in posca, their sour drink of vinegar and wine, then mixed it with garlic, honey, cheese, herbs, pepper, and olive oil. It was simple, quick, and believed to restore the humors of the body. Vinegar to cool, garlic to warm, herbs to soothe, cheese to strengthen. For them it was a perfectly balanced bowl of medicine.
I recreated it exactly as written and was shocked at how refreshing and flavorful it is. It tastes like a mix of gazpacho and panzanella and it comes together in minutes with no cooking at all. It is bright, tangy, creamy, and packed with herbs. This dish is proof that the ancient world knew what they were doing in the kitchen.
I gave it an 8.9 out of 10 for flavor and for how easy it is to bring a little Roman history straight into your home.
